Prepare a pic-nic on the sand.. with a red wine bottle.. a stereo... with soft music.. and some candles... Before go there I suggest u to blindfold eyes of your girlfriend... and tell her that it is a surprise!!
Make it a little intriguing...

Light a bon fire, take a BBQ, marinate straberrys in lemon juice and honey and lightly grill them, make a salad, take a pot of coffe along, make it hot on the dying coals.... watch the stars, listen to the shound of the waves

Do a picnic type thing.....(finger foods, nothing messy to eat) cheese, crackers, wine...stuff like that....Get a seashell (before you go) and write something like your beautiful on it...While your walking act like you pick it up and give it to her....She'll love it!
