I see where you're going with this. It's like the question about why sour cream has an expiration date? but croutons aren't really stale bread, they are toasted so they're nice and crunchy. when croutons absorb moisture from the air, they lose their crunch and start to taste "funny".

croutons are baked to remove moisture, that is what makes them crunchy. if air gets to them they will absorb the moisture and it will make them stale. but if this happens put them in a single layer on a cookie sheet and put them into a 350 over for a few minutes. it will remove the moisture.

croutons are made like that.they are dried out on purpose -they are not just stale.so with a sell by date on them they wont go bad because even though they are already dried out to be stale doesnt mean they cant get moldy and gross!

You see they will eventualy collect humidity and become soggy and wont have the same crunch. You must have experienced this with Chips and some point or another.

They're not stale, theyre toasted, and i guess they don't want them to get stale or moldy.
