Well chopped walnuts work. I put whole kernel corn in mine. You can also cut up fresh squash and add it to the salad.

Another trick I learned a long time ago that has nothing to do with adding stuff to salad but really makes a salad heavy diet easy to deal with is to put your dressing on the side and dip you forkfulls in it bite by bite. You will eat a whole lot less salad dressing.

Advacados add a twist, and so do alfalfa sprouts. Advacados are high in fat, but the good fat, so it's ok. Alfalfa sprouts are very low in calories and add bulk. Almonds are a good choice for crunch.

Soy nuts (unsalted if you can find them), sunflower seeds (ditto on the lack of salt), are tasty, add texture and add great nutrition to salads.

you can pretty much add anything that catches your fancy and is worth eating. I personally like mandarin oranges, edamame and grilled chicken with sliced toasted almonds or pecans, especially with sesame ginger dressing (try Paul Newman's version) yummmm!

Tomato, a little beat and/or carrot, cabbage or any green leaves (spinach, letus), a little sprouts do well.
Sprouts +cabbage + lemon juice sprinkled over also does well.
