I’ve got friends coming round and I think a few fajitas won’t satisfy them?

Guacamole, salsa and chips, margaritas, Cerveza...
A great thing to add to store bought salsa to punch it up is: one purple onion diced, frozen corn 1 1/2 cups, 1 can black beans and 1 diced red pepper. Makes regular salsa special. Enjoy!

Refried beans and Spanish rice...both easy to make and go perfectly. Buy the refried beans in a can, stir in some salsa, top with cheese and either bake in a 350 degree oven for about 30 minutes or micro until they are bubbly.

Lipton spanish rice is also very good and you can doctor it up if you want with extra green chilis, salsa, cilantro, etc.

Nachos.
Buy Dorito's(tortilla chips), hot salsa dip and cheese.
Grate the cheese, put a layer of dorito's in an oven dish, salsa on top then grate cheese on top...repeat the layers and stick in an over until brown and cheese is all melted...usually around 20 mins on medium heat. Cheap and very tasty.
You can also do some nice cous cous or bean salad.

Theme it up!!
Guacamole and tortilla chips 'n' dip.
Also sour cream for dipping and putting on the fajitas if they are too hot or spicy.
Maybe a few Mexican beers. Sol or Corona and dont forget the slice of lime in the bottle top.

Fry up some flour or corn tortillas cut in quarters and serve with bean dip, salsa, and homemade guacamole. If that still doesn't seem like enough, put out a tray of fresh fruit or make some Mexican rice.

Rice is the favourite and the fajitas .. well .. just make more of them and ensure you have plenty of salsa, sour cream, guacamole, veg and refried beans to bulk them out ..

Black beans and rice are a wonderful accompaniment for fajitas. Or refried beans. Chips and salsa are easy and accompanies very well, also.

I think potato chips work well as do Nachos with melted cheese, jalapenos, guacamole, salsa and soured cream, also a big dressed salad should go down well.
