I am just after a little bit of advice and guidance. I am cooking for my girlfriend tonight ( she is a vegetarian and doesnt eat eggs or cheese ) I a want to cook roasted stuffed peppers with a cous cous stuffing. to me cous cous is a bit boring any ideas how I can make it more tasty ( and dont say add meat, I wish I could but I cant ) so variation on a vegetarian theme please.

I'd add some flavouring to the couscous as you cook it - if you're doing stuffed peppers, I'd go for something with a bit of zing, so a bit of chilli oil. Fry up some finely-diced veggies, also in a bit of chilli oil, or add some garlic and chopped fresh chilli, and stir the whole lot through the couscous mix once it's done. Then stuff the pepper, put the "lid" back on, wrap in foil, and bake in the oven. (Veggies that go well are onion, mushroom, courgette, tomatoes, more peppers, that sort of thing. Something bright and colourful, and with a crunchy texture to add a bit of difference to the couscous.)

Alternatively, if you want something more delicate, flavour the couscous with orange water in the last minute or so of cooking, and stir through some torn up coriander, with a dash of lime.

Basically, you can add anything to couscous - but it definitely needs something, as it is really boring otherwise!

I had cous cous the other night, so I have some advice for you - if you're going to make it with stock, make up the full quantity of stock but only use half of it. I used a whole stock cube and half the amount of water (not thinking, small child screaming at me) and it was horrible, far too salty. I've learned my lesson.

Cook some onion & garlic in olive oil. Add a jar of plain pasta sauce and then stir it through the cooked couscous. Since you can't top it with cheese, maybe some crispy fried onions on the top?

Alternatively try http://www.recipezaar.com - you can search by ingredients & then narrow it down by category. So for example, you could search for couscous & peppers & vegetarian recipes.

you can add vegetable bouillon powder to the water your adding to cous cous or some spices such as chill, ground cumin, ground corriander,

dont be too adventurous because you dont want to over do it.

add veggies to it-dice up mushrooms maybe some red peppers for color,carrots,purple onions or green onions-if she likes spicy add some cajun seasoning otherwise garlic is good-good luck and have fun!

eazy... insted of just rehydrating your cous cous in wayer try veg stogk or tomato juice, add tomato puree, garlic, sweetcorn, oragano (i cant spell) roasted veg also goes well..be adventerous...
