try this crush 3 cloves of garlic and mix with a block of butter add some fresh mint cover joint of lamb with mixture leave in fridge overnight then roast in oven with tinfoil on last half hour of cooking take foil off and chuck in some raw potatoes to roast lovely try it if you like garlic add more to mixture

Make small cuts in the meat and put slivers of garlic into them. Then sprinkle the meat with rosemary and stand it in a pan on some onions sliced into rings. Put a sliced parsnip or some carrots in too if you like. Season the vegetables.
Put it all in the oven to roast.
Baste the meat from time to time with the juices which collect in the pan.

I use rosemary and some fresh mint leaves that's if your using a mint jelly for the chops if your using a cranberry glaze replace the mint with dry mustard
