The best wine is the wine you like the most for the amount you wish to spend.
Red wine = Stags Leap, Cabernet Sauvignon, 2002
White wine = Pinot Grigio or a Chablis from France.

The best wine in the world is the one that is most appealing to your taste buds. There is a big difference even between great bordeaux and great bourgogne despite their relative geographic proximity. And sometimes a lighter, less complex wine is more suited for certain occasions.
That said, what I think is the best red and white in the world are:
White - for me picking the best white is much easier - it is definitely from Bourgogne, and it is most certainly an old Montrachet, maybe from the 1960s (or after) by a great maker like Ramonet or DRC etc. Next in line for me would be an old 1er Cru Meursault.
Red - harder, since I am conflicted on red between Bordeaux and Bourgogne. However, I would say Grand Cru from Vosne Romanee (I have never had Romanee Conti or La Romanee, but the other Grand Crus are awesome, as long as it is from a good maker: La Tache, Romanee Saint Vivant, Richebourg.) Next in line are my favorite Bordeaux - La Tour and Pichon Lalande.
Runners-up is Chambolle-Musigny Les Amoureuses (1er Cru) by Groffier or Vogue, and Sassicaia, especially 1995 (though I hear 1985 is best).

Define best.
There is no consensus among wine experts. The concept of 'best' where wine is concerned is pretty meaningless.
Is the most expensive wine best? Or the wine that sells the most bottles?
For me, the best wine is always the one I am going to have next.
And tonight I am thinking of a Rhone style blend to go with a cassoulet. Now should I have Roulette from Lammershoek, Clos de Reynard from Bonny Doon or Clos Montirius??
