Can I create my own software license in the form of a text file and distribute it with my product, programs or technical documents?

The license would control how my products, progams or docs would be used.

Will such a license be protected by law in case some violates the terms of the license?

I am in India, so is it protected in India too?

I don't know India law, but in the USA you can declare a copyright on any works you (or your company creates) and it is automatically protected. If you want more protection you can apply for patents, but these require more paperwork and $$.
