definitely not xylem you need cells with thin, soft cell walls thyt can change volume. i do not know what you need - microscopic or macroscopic level. for the first i recomend stomata - strip off the leaf epidermis and place in different water potential solutions and watch for change. for macro level try cutting up cubicles of potato or kohlrabi - but then you can better observe change in mass , not volume, in any case.. for changes in volume, animal cells are better, because they can shrink - like bloodcells are routinely used for what you need
