Fry or "sear" each side in a super hot pan. Then place the oven proof pan with the steak into a preheated 450 degree oven to finish it off. This is how many of the deluxe steak houses do their steaks. Timing of each step depends on type of steak.

I'll fry, extremely hot pan (preferrably iron skillet), some olive oil, and 2-3 minutes per side with your favorite seasoning.
