OMG, that is SO weird, I had banana pancakes for dinner tonight! Take your run of the mill, out of the box pancake mix and add in a little vanilla extract and a pinch or 2 of sugar. Slice your banana. When you pour your pancakes give them just a frew seconds to firm up and then cover the surface of the pancake with your banana slices. When you flip them, the bananas will cook and get a little mushy. Serve them up with your favorite syrup and sit back with some Jack Johnson while you chow down!

Banana Pancakes:

To make these pancakes without cookie cutters, pour batter by 1/4 cupfuls onto hot griddle, and proceed as directed.

1 cup all-purpose flour
1 tablespoon baking powder
2 teaspoons sugar
1 teaspoon salt
1 1/8 cups milk (use more for thinner batter)
1 large egg, lightly beaten
1 cup chopped banana (2 bananas)
2 to 4 (4 1/2- to 5-inch) heavy metal cookie cutters

Combine flour and next 3 ingredients in a bowl; whisk in 1 1/8 cups milk and egg, whisking until mixture is blended. Stir in banana.

Grease heavy metal cookie cutters lightly, and place on hot (375°), lightly greased griddle. Pour pancake batter (approximately 2 tablespoons) into each cutter. Using tongs, remove cutters after 1 minute (cutters will be hot); cook pancakes 2 more minutes. Turn pancakes over, and cook 2 to 3 more minutes or until done.

Yield: Makes 12 pancakes

The very best banana pancakes are soooo easy to make!!
1-Buy a pre-mixed pancake batter--make as instructed, except add half a mashed banana to batter.
2-Slice half a banana in a small pancake sized shape on your grill.
3-Pour batter over sliced bananas.
Flip when edges are done, and bubbles are all over top of pancake.
4-Repeat until batter and bananas are gone.
5-Enjoy!!

Banana Sour Cream Pancakes

1½ cups all-purpose flour
3 tablespoons sugar
2 teaspoons baking powder
1½ teaspoons kosher salt
½ cup sour cream
3/4 cup plus 1 tablespoon milk
2 extra-large eggs
1 teaspoon pure vanilla extract
1 teaspoon grated lemon zest
Unsalted butter
2 ripe bananas, diced, plus extra for serving
Pure maple syrup

In a medium bowl, sift together the flour, sugar, baking powder, and salt. Whisk together the sour cream, milk, eggs, vanilla, and lemon zest. Add the wet ingredients to the dry ones, mixing only until combined.

Melt 1 tablespoon of butter in a large skillet over medium-low heat until it bubbles. Ladle the pancake batter into the pan. Distribute a rounded tablespoon of bananas on each pancake. Cook for 2 to 3 minutes, until bubbles appear on top and the underside is nicely browned. Flip the pancakes and then cook for another minute, until browned. Wipe out the pan with a paper towel, add more butter to the pan, and continue cooking pancakes until all the batter is used. Serve with sliced bananas, butter, and maple syrup.

I think if you go with your original panckae batter and smash
a couple of bananas with just a little added sugar and ground
cinnamon, you may end up with some yummy pancakes. I
haven't made pancakes this way in a long time. Yet they do
taste good.

Make regular pancake batter....then mush up a couple of bananas like you would do to make banana bread... add a few crushed walnuts and grill on a skillett... Yummy. Top with fresh bananas...a little honey is good too.

BANANA PANCAKES

1 c. flour
2 tbsp. sugar
1/2 tsp. baking soda
1/4 tsp. salt
1 egg, beaten
2 tbsp. oil
1 med. banana, mashed

Combine first 4 ingredients; mix well. Combine next four ingredients and mix well. Add flour mixture to egg mixture. Do not mix too much, only until flour mixture is moistened. Combined mixture should be lumpy. Fry in very slightly oiled preheated pan or grill until edge looks tried, turn and cook until done. Cook pancakes in low gas setting.
