I have been picking blueberries all summer. I have several pounds frozen to use this winter. I have made pies, jam, and smooties. There are still plenty of berries on the bushes to be had. What to do with them?

Sugar Pie's Blueberry Stuffed French Toast Casserole

Nonstick cooking spray
9 eggs, beaten
2 cups milk
¼ cup melted butter
½ cup maple syrup
12 cups cubed stale French bread
1 (8 oz.) package cream cheese, cut into small cubes
2 cups fresh or frozen blueberries
Blueberry Syrup or maple syrup (optional)

Preheat oven to 350ºF. Grease a 3-quart rectangular baking dish with cooking spray; set aside.

In a smaller bowl combine eggs, milk, butter, and the ½ cup maple syrup. Whisk until combined. Place bread cubes in large bowl; add cream cheese and the blueberries. Slowly pour the egg mixture over blueberry-and-bread mixture; gently fold mixture to evenly moisten the bread. Pour into greased casserole dish.

Bake 40 to 45 minutes or until a knife inserted near the center comes out clean. If necessary, cover with foil the last 10 minutes of baking to prevent overbrowning. Let stand 10 minutes before serving. Cut in squares. Serve with Blueberry Syrup or additional maple syrup, if desired. Makes 12 servings.

Blueberry Dumplings

1 cup all-purpose flour
1 tablespoon sugar, plus 1 1/2 cups
1 teaspoon baking powder
Pinch salt
1/2 cup (1 stick) butter, softened
1/4 cup milk
1 quart fresh or frozen blueberries
2 cups water
Vanilla ice cream or fresh cream, for serving

Stir flour, 1 tablespoon sugar, baking powder, and salt together into a medium bowl. Cut butter into dry ingredients, using a pastry cutter or fork. Add milk to form dough. Set dumpling dough aside.
In a large saucepan, combine berries, 1 1/2 cups sugar, and water and bring to a boil. Drop dumplings into hot boiling berries by the tablespoonful. Cover pot, reduce heat to low, and cook slowly for 20 to 30 minutes. Do not remove the lid before 20 minutes has passed, and do not stir dumplings. Serve warm with vanilla ice cream or fresh cream.

Red, White and Blueberry Cheesecake Pie

Yield: 10 portions

8 sheets (about 13”x14” each) thawed phyllo dough
1/4 cup butter or margarine, melted
2 pkg cream cheese
1/2 cup sugar
1 tsp vanilla extract
2 eggs
2 cups fresh blueberries, divided
1/2 cup strawberry jelly
1 cup whipped cream or Cool Whip, optional

Preheat oven to 425ºF.

For crust:
Grease a 9-inch pie plate; set aside.
On a flat surface place 1 sheet phyllo (keep remaining phyllo covered to prevent drying out); brush with butter. Top with another phyllo sheet; brush with butter. Repeat with remaining phyllo and butter to make 8 layers. Using kitchen scissors, cut layers into a 12 to 13-inch circle. Carefully press circle into prepared pie plate; gently fan edges. Bake until edges are just golden, 6 to 8 minutes; cool slightly on a wire rack. Reduce oven to 350ºF.
For filling:
In a medium bowl with an electric mixer, beat cream cheese, sugar and vanilla until light and fluffy. Add eggs; beat until well combined. Fold in 1 cup of the blueberries.
Pour into prepared crust. To prevent over-browning of crust, gently cover with foil the last 25 minutes of baking. Bake until set, 40-50 min; cool completely on rack.

To serve: In a small bowl beat jelly until smooth; spread over cheese filling. Arrange remaining blueberries on top in star shape. Garnish with whipped cream, if desired.

Blueberry Streusel Coffee Cake

2 c. flour
1 c. sugar
2 tsp. baking soda
pinch salt
1 egg, beaten
1 c. milk
1/2 c. butter, softened
1 c. fresh or frozen blueberries
1 c. chopped pecans

Streusel Topping
1/2 c. sugar
1/3 c. flour
1/4 c. cold butter

In bowl combine first four ingredients. Add egg, milk and butter. Fold in nuts and berries. Spread into buttered 9" square pan. Mix streusel ingredients together until crumbly. Sprinkle over batter. Bake 375F. degrees for 40 minutes.

BLUEBERRY MUFFINS w/ STREUSEL TOPPING

2 3/4 c flour
3/4 c sugar
3/4 c brown sugar
1 t. baking powder
1 t baking soda
1/2 t salt
2 large eggs, beaten
1 1/2 sticks unsalted butter, melted
3/4 c buttermilk
1 T vanilla extract
1 3/4 t lemon extract
1 3/4 c blueberries

Preheat oven to 375ºF. Combine dry ingredients, in separate bowl combine eggs, butter, buttermilk, and extracts. Add to dry ingredients and stir (do not beat!) till moist. Fold in blueberries. Put batter into 16 lined muffin tins.

Topping:
3/4 old fashion oats
1/4 c sugar AND brown sugar
1/2 stick melted butter

Combine the above. Spoon 1 Tbsp. topping on each muffin; lightly press into batter. Bake 20-25 min. Muffins freeze well.

I have a couple for you...
Blueberry Cobbler
Get the Bisquick Biscuit Mix and prepare as directed from box.
In a small pot combine blueberries (4 cups) with (2cups) sugar, and 1/2 tbs. of vanilla, simmer until the sugar makes a syrup. Transfer into a baking dish, and top with the biscuit mixture. Bake for 45 minutes, and it makes a cobbler.

Chicken Salad w/Blueberry Viniagrette
2 cups Blueberries, 2 cups Balsamic Vinegar, 1/4 cup sugar, 1/4 cup olive oil, 1/2 tsp salt, 1/4 cup chopped pecans.
Combine all ingredients in food processor...blend. Pour over fresh romaine lettuce, chopped bell peppers,chopped celery and diced grilled chicken. (This is really good in the summer months.)

Tell a few of your neighbors or special friends and invite them over to pick some of your berries, then have them stay for blueberry pancake dinner or something else...a big green salad with lots of blueberries in it. Now you have shared your lucky bushes with friends and made a fun evening out of it also!

I have a few minor suggestions - Blueberry jam with TripleSec liquor ( replace 2 cups sugar with triple sec - no alcohol left after the cooking, but a wonderful mix of blueberry and orange)!

Also, have you tried drying them? Dried blueberries have a wonderfull flavour that I use in the place of Cranberries for thanksgiving. They can be used in Sage dressing, and in any apple cider drink you might like.

Allright, I'll come flat out and say it! Dry some blueberries, mix with freshly dried sage, savoury, thyme, apple, and marjoram. Add a small bit of dried mint. It should be mostly dried blueberries. Package this mixture in a small tin and sell it as a rub for wild game, fowl, and, with balsamic vinegar, salad dressing.

No telling where you'll go!

Sprinkle 1 1/2 cup berries w/ sugar.

Mix w/ 1 box Duncan Hines yellow or white cake mix, 1 cup milk.

Top mixture w/ pieces of butter.

Bake 35-40 or so minutes.

Use the Web to find recipes for Blueberry Coffee Cake or Blueberry Muffins....They freeze very well and will keep you going all winter....lucky you !

Blueberries are sooo good for you! You should freeze them on a plate individually then put into freezer bags. They will not stick together.
You can then grab out a handful all winter, and sprinkle on yogurt.
We love to eat them frozen!
Do you grow them organically?

make blue berries shake, cocktail,jellies, pudding tarts, etc. or better sell it in a cheap price or give it to da old folks or poor people. if u froze 4 winter u can take it out and make BB tarts! share it. in summer you can make ice-shake. for winter tarts to eat in front of the fire. autum any thing. spring jellies?
