why would you want to spoil the flavor of a good steak like rib eye or fillet? in the Texas steak cook-off the chefs that won did not use anything to cover up the flavor of the steak. a moist, tender steak has the best taste. you get this by having your grill or flame on high and searing both sides of the steak. reduce the heat and finish the cooking process slowly. never cook the steak over med. rare. remember that the heat in the steak will continue to cook the steak center after you take it off the heat. the steak should be cut into thin strips, across the grain. bon apatite

Steak Marinade
6 ounce pineapple juice
1/4 cup packed brown sugar
1/3 cup cider vinegar
1/8 cup soy sauce
1/3 cup catsup (or Barbecue sauce)
1 teaspoon ground ginger
1-1/2 teaspoon honey or liquid smoke
Combine all ingredients. Add with meat to a large shallow dish or to a large zip-lock bag. Refrigerate over night.
Remove meat and cook. If you wish to use marinade as a baste; boil it for 10 minutes in sauce pan or microwave first.
