Benihana Ginger Salad Dressing
As far as salad dressings go, this is one of the most requested, and tasty. At the Benihana
chain of hibachi grill restaurants, you are served a side salad before your meal that is
doused with this tangy, slightly sweet, fresh ginger dressing. This Top Secret Recipes
version of that dressing is a real cinch to make, once you've got the ingredients. Just dump
everything into a blender, whiz it, and you're set. Although this recipe is inspired by the
many variations of the clone recipe that are floating around (and that I have received by
e-mail), you should know that this is an original never-before-published creation that comes
closer to the original product than any other version I have seen. See what you think.
1/2 cup minced onion
1/2 cup peanut oil
1/3 cup rice vinegar
2 tablespoons water
2 tablespoons minced fresh ginger
2 tablespoons minced celery
2 tablespoons ketchup
4 teaspoons soy sauce
2 teaspoons sugar
2 teaspoons lemon juice
1/2 teaspoon minced garlic
1/2 teaspoon salt
1/4 teaspoon black pepper
1. Combine all ingredients in a blender. Blend on high speed for about 30 seconds or until all
of the ginger is well-pureed.
Makes 1 3/4 cups."

the easiest way to use it is to freeze it first. Then grate it with the peel on. The freezer makes it easier to grate. I use ginger root in stir frys. It really makes a huge difference to use fresh and not powdered.
Also, you can use a nice sized chunk the next time you make a pot of tea. Put the ginger root right into the water and allow it to steep the entire time you're preparing the tea. It tastes great.

Ginger root chicken is yum-mm. How it is prepared:
Chicken pieces - your favorite
Ginger root, peeled (about one to two inches) sliced.
1 yellow onion, chopped
celery, two limbs, chopped
2-3 garlic, minced
soy sauce, 1/4 cup
1 can chicken broth
1 bay leaf.
Other uses: ginger root tea, said to be good for your health.

Ginger is usually peeled to remove rough spots. It could be used without peeling too, just wash it.
I use it to remove fishy smell from fish and that sometimes lingering annoying flavor from chicken.
Its good sliced and steamed with fish and poultry. I dice it with scallions and tomatoes as a fresh salsa for grilled or broiled mahi mahi or mackarel. I grate it and mix it with green onions, pour hot oil on it and use it as a sauce for steamed chicken. It's also good combined with lemongrass . Place both while making rice. It emits the most relaxing scent.
Ginger soothes the throat, too. Hot water with a slice of ginger works wonders with your throat and voice.

Grating works well. Another way is to mince it with a sharp knife and a cutting board.
Ginger root will go bad if you leave it dry, but you can put it in a small jar covered with some sherry wine and it will keep for years (and you will have ginger-flavored sherry to add to your cooking).

Grating or slicing in medallions is usually what you do with it. I like the other answer about freezing first, you should peel first. I use it chopped when I cook rice to go with my Oriental dishes. I cook it with the filling for Chinese dumplings and also in the sauce for dipping.
