Easy version -
Buy some canned stewed tomatoes. You'll generally want several large cans worth.
Sautee white onion in a pot until they start to brown.
Add as much garlic as you like, and sautee a few minutes.
Add tomatoes (drained), some red wine (maybe 1/4c), and any other things you like (mushrooms, olives, veggie 'meat')
Let simmer over low heat until the sauce had reduced slightly
Add seasoning (Basil, Oregano, Salt, Black Pepper, Red Pepper, Rosemary, etc)
If sauce is not rich enough, add several tablespoons of tomato paste
Let simmer until it reaches a satisfactory consistency.
I like to let my sauces sit overnight to allow the sauce to 'mature'. Then, serve over a nice pasta (Trader Joe's Yellow Bag, DeCecco, Ronzoni, etc).
You can even add some whole milk fresh mozzarella and broil for several minutes.

Meatless Dishes in Twenty Minutes Even though the title of the book says meatless some of the recipes contain meat. I received the book as a gift and skeptically tried it out. Seriously there has not been a recipe tried that has not been great and simple. Best of all it really is portions that are good for two people with maybe a little left overs if you don't eat larger portions as I do. Additionally if you actually make the dishes more than say 5 times they really do only take 20 minutes to make. Sometimes I choose to use fresh ingredients instead of some of the short cuts they suggest so it takes a bit longer but you will really find a variety of some tasty eating in this simple easy to read and follow book. Gorgonzola, Pear, and Walnut Salad 2 Servings 1/2 cup walnut halves or large pieces 1 large ripe pear 4 cups packed assorted bitter salad greens. 1 cup (about 4 oz) crumbled Gorgonzola or Stilton cheese 1/4 cup walnut oil 11/2 tablespoon fresh lemon juice 1 teaspoon sugar 1 teaspoon Dijon-style mustard 1/4 teaspoon salt 1/8 teaspoon freshly ground black pepper Heat oven to 350 F. Place walnuts on a small baking sheet and bake for 6 to 8 minutes or until toasted. While walnuts are toasting, dice pear into 1/2-inch-thick cubes. Remove toasted walnuts from oven and let cool. Combine greens, pear, and cheese in a large bowl. Combine oil, lemon juice, sugar, mustard, salt, and pepper, mixing well with a fork. Add to greens with cooled walnuts and toss well. Serving Suggestion: Serve with warmed French rolls.

Basic Pesto Sauce Recipe
Here's a basic Italian recipe that you can use for many dishes! The basic pesto sauce is a classic sauce used in much of Italian cooking.
For years many Italians felt strongly that this sauce should be made by hand, with a pestle and mortar. If you use a food processor you will get the same results. The sauce is served with different types of pasta, as a flavoring for soups, and on a fresh Mozzarella and tomato salad.
Pesto alla Genovese
Basic Pesto Sauce
Ingredients
* 3 cloves garlic
* 1 large bunch Basil leaves (about 2 cups)
* 1/3 cup pine nuts
* salt
* fresh ground, black pepper
* 1 cup extra virgin olive oil
* 1/2 cup parmesan cheese
Directions
1. Peel and crush the garlic cloves.
2. Mince the basil leaves.
3. Blend garlic, basil, and 1/2 cup olive oil, and cheese in a food processor or blender. Use low speed and stop often to stir.
4. Gently blend in remainder of olive oil and the pine nuts.
5. Let sit for an hour before using.

Madison County Spaghetti Sauce
Ingredients:
1/4 c Vegetable oil
1 md Onion; chopped
1/4 c Green bell pepper; chopped
2 Cloves garlic; minced
3 cn (12-oz) tomato paste
6 -(up to)
7 cn Water
1/4 ts Dried oregano
1 ts Dried basil
1 sm Bay leaf
1 tb Sugar
1 1/2 ts Salt
1/4 ts Pepper
Heat oil in a large pot over mediun heat. Saute the onion, green pepper,
and garlic until soft, about 5 minutes. Add the tomato paste and water, and
stir until smooth. Add oregano, basil, bay leaf, sugar, salt and pepper.
Simmer, uncovered for 1-2 hours. Serve over spaghetti.
Variation: For meat sauce, brown 1 pound Italian sausage and 1 pound ground
beef, and add with the spices.

If you are not vegan, you really must try this--very easy and delicious. All you need are :
--2 lbs. fresh tomatoes, peeled, seeded and roughly chopped (but if it's winter, use a 28-oz. can of tomatoes with their instead--it's almost as good!)
--1/2 a stick of butter (I know that sounds like a lot, but trust me on this one)
--1 medium yellow onion, peeled and cut in half
--1 teaspoon salt--you might not need that much if you use canned tomatoes.
Put the four ingredients in a medium heavy saucepan. Bring to a low boil. Reduce the heat until the ingredients are at a slow, steady simmer. Cook uncovered about 30 minutes, stirring once in a while, then check on it. If the consistency is saucelike and you can see little tiny pools of butter floating on top, it's done. It might take another 5 to 10 minutes.
Remove from the heat. The onion will mostly have dissolved into the sauce, but try to fish out any big pieces that remain with a spoon. Check the salt. Serve over spaghetti or linguini with lots of torn or shredded fresh basil and good grated Parmesan.
It sounds humble with its 4 ingredients, but wait till you try it. My dad used to insist he didn't really like tomato sauce, but then I caught him in my kitchen eating it right out of the pot with a spoon!

For a light pasta dish I would go with a pomodoro sauce. It's super easy and really delicious. Here's how you make it.
Start a pot of water to boil your angel hair pasta in. Chop up a couple of roma tomatoes, fresh basil, and about two garlic cloves. Heat a large pan over medium heat and add about two tablespoons of olive oil. Throw in the garlic and then the tomatoes right after that. Turn heat down to low and simmer until tomatoes are cooked through. Meanwhile cook your pasta, but reserve about half a cup of the pasta water when you strain it. Add pasta water to sauce and stir. Then add your pasta directly into that. Toss in the fresh basil and serve. Add some parmigiana cheese for taste.

This uncooked sauce is both easy and delicious.
Mix all the following together and toss with 1 pound (dry, uncooked weight) of spaghetti, prepared according to box directions, and drained as per usual.
1 large can of good quality diced tomatoes well drained
2 garlic cloves, peeled and minced,
3 tablespoons olive oil
1/4 cup chopped fresh basil
1/2 teaspoon salt, or to taste
black pepper, to taste
Sprinkle liberally with freshly grated parmesano regiano.
Note: Unless you have access to high quality, home grown, perfectly ripe tomatoes (which is what I use because I grow them myself) then you're better off using canned tomatoes than dicing some store bought tomatoes.

2 cans of cut-up tomatoes, olive oil and garlic. Put olive oil in pot (enough to cover the bottom of the pot), add 2 cut up cloves of garlic. Stir for about a minute. Pour in the 2 cans of cut-up tomoatoes. Stir every so often for about 1/2 hour.... whaaa-laaa!

Look for "pesto" in a cooking site... I don't know the name of herbs and spices in English (very sorry for that), but it is very simple to make in a blender and very tasty (You don't even have to cook it!) Good luck!
