I cooked a whole 13 lb. turkey and have a lot leftover. I'm looking for ideas besides just reheating it up and eating it dry in a sandwich. Thank you all in advance.

I have one! Dice up two cups of turkey and place in a casserole dish. Add paprika, salt and pepper, onion, and cooked noodles. One can of cream of chicken soup and one can of cream of celery soup. One can milk. Mix and place Monteray Jack shredded cheese on top. Bake until heated through.

Turkey Enchiladas...
Julienne your turkey, fry some chopped onion, red & green bell pepper when they are tender add the turkey and stir fry a few minutes. Then add either a packet of taco spices, or make your own mix with ground cumin, paprika, chili powder, salt, and a little chopped coriander..
Spoon some of this mixture into some tender corn tortillas, fold up and place in a baking dish. Cover with a small can of a mexican sauce you prefer, I like the salsa verde, then cover with a container of cooking cream and some grated cheese (if you like). Place in a hot oven a few minutes till the cheese has melted and the cream is heated through. Serve with some refried beans.

Turkey Parmentier.

Make up a package of instant mashed potatoes.
Chop up some of your turkey and fry a few minutes with a chopped clove of garlic, a little parsley, and add a jar of italian tomato sauce (plain tomato or w/ mushrooms is good). Place half of the potatoes in a baking dish, put the turkey mixture over this and cover with the rest of the potatoes. Top with some grated cheese, then place under the grill of your oven (or microwave) until the cheese has melted.

Leftover Turkey Soup

Total Time: 30 min
Makes: 6 servings, 1 cup each

1/2 cup chopped onion
1 medium carrot, sliced
1 stalk celery, sliced
1 Tbsp. oil
2 cans (14-1/2 oz. each) chicken broth
2 cups water
1 env. GOOD SEASONS Italian Salad Dressing & Recipe Mix
2 cups cubed cooked turkey
1/2 cup bite-sized pasta, uncooked

COOK onion, carrot and celery in hot oil in large saucepan 3 to 5 minutes or until crisp-tender, stirring occasionally.
STIR in chicken broth, water and dressing mix. Bring to boil.
ADD turkey and pasta; cover. Reduce heat to medium-low; simmer 10 to 12 minutes or until pasta is tender.

TURKEY QUESADILLAS

12 ounces cooked turkey
2/3 cup shredded monterey jack cheese
1/4 cup finely chopped green onion
8 (8") flour tortillas
1 cup salsa
1 cup sour cream

Combine turkey and salsa in bowl. Divide turkey mixture, cheese and green onions evenly among 4 tortillas.
Cover with remaining tortillas. Heat one tortilla stack in large skillet over medium heat for 2-3 minutes.

Turn tortilla over and repeat for another 2-3 minutes or until cheese is melted. Repeat with remaining tortilla stacks.

3/4 pound (12 ounces) cream cheese, room temperature 1/2 cup minced scallions (white and green parts) Pinch kosher salt Pinch freshly ground black pepper Sandwiches: 1 loaf dense raisin-nut bread, unsliced turkey Fresh basil leaves Directions For the scallion cream cheese, combine the cream cheese, scallions and the salt and pepper in an electric mixer fitted with a paddle attachment. Do not whip. For the sandwiches, have the store slice the bread lengthwise on a meat slicer into 1/4-inch-thick slices. (If that isn't possible, you can slice it crosswise with a very sharp knife.) Lay out 8 slices of bread and spread them all with a thin layer of scallion cream cheese. Place a single layer of turkey on half the slices, cutting the edges to fit the bread. Place the basil leaves randomly on top of the turkey. Top with the other 4 slices of bread, cream cheese side down. Lay the sandwiches on a baking sheet covered with parchment paper, cover with damp paper towels and wrap the sheet with plastic. Refrigerate until the cream cheese is cold and firm. Place the sandwiches on a cutting board and, with a very sharp knife, cut off the crusts. Cut each large sandwich in half crosswise, and then cut each half diagonally, twice, to make a total of 8 small triangles. (If the bread was cut crosswise, follow the assembly directions, then cut off the crusts and cut diagonally, twice, to make 4 small triangles.) Serve chilled.

here are a few of my family's favorites,

dice 2 cups turkey
1 cup poultry gravy
1 cup diced boiled potato
one med onion diced & sauteed
2 cups cooked peas & carrots
pre baked pie crust
package of croissant rolls

heat turkey, gravy, potato sauteed onion, peas & carrots in a med saucepan to a simmer

pour into prepared pie crust
place crescent roll pastery dough on top, to cover the pie, bake according to package directions of the crescent roll dough, untill golden

turkey soup
1 large can chicken or turkey broth
1 chicken boullion cube
2 cups water
2 cups cubed turkey meat
2 large carrots cut into coins
2 celery stick diced
1 med onion diced
poultry seasoning
black pepper
1 tsp bouquet or gravy master

sautee onions & celery in large kettle, add broth, water & boullion, turkey, carrots, and gravy master, season with poultry seasoning
simmer untill carrots are soft ( about 45 min) sprinkle with pepper, or hot sauce.
serve over rice, or extra wide egg noodles, with a good crusty bread

Turkey salad
1 cup turkey diced or shredded
1 celery stick diced
3 tbs miracle whip
1 tsp brown mustard
3 celery seeds
pinch of dried basil

mix well & enjoy on a sandwich with lettuce & tomato, or add some cold macaroni for macaroni salad.

Cashew Turkey

slices of turkey
2 tablespoons vegetable oil
3 cloves garlic, minced
4 red chilies, dried, chopped
1 red bell pepper, sliced into thin strips
2 tablespoons oyster sauce
1 tablespoon soy sauce
6 green onions, cut into 1-inch lengths
1 cup roasted cashews
2 cups cooked rice

Cut turkey into 1-1/2 x 1/2-inch strips.
Heat wok over high heat.
Add oil, garlic, chilies and turkey.
Stir-fry for 2 minutes.
Add pepper, oyster sauce, soy sauce, green onion and cashews.
Stir-fry for 2 more minutes.
Remove at once and serve with cooked rice.


Sesame Turkey With Sugar Snap Peas

1 bowl of turkey meat, cut into bite-sized pieces
1 tablespoon vegetable oil
1 tablespoon ginger root, finely grated
1 teaspoon salt
1 pound fresh sugar snap peas
1 teaspoon sesame oil
1 tablespoon black sesame seeds


Heat the wok over high heat.
Add oil and bite-sized pieces of turkey tenderloin, ginger root and salt, stirring constantly until turkey is no longer pink inside, about 5 minutes.
Add peas, sesame oil and sesame seeds and continue cooking for 1 minute.
Remove and serve with cooked rice.

get hogie buns toast in the broiler...slice the turkey and heat with some BBQ sauce, cook some fries and enjoy!! A hot turkey BBQ sandwich...

make Turkey salad... I don't have a recipe for it but I assume it's made like chicken salad... my mom used to make it and it was really good on a sandwich.

You could also make some gravy and put the turky over toast and then put gravy ontop for a hot turky sandwich...

I'm getting hungy now, lol
