Bacon and cooked apples over pancakes
Cooked Apples
3 lbs. apples
1 tbs. water
1/2 c. sugar
1/2 tsp. cinnamon
pinch nutmeg
1/4 c. butter
Core, pare and chop apples into bite-size chunks.
Place in saucepan with water over medium heat.
Sprinkle with sugar, cinnamon and nutmeg.
Add butter and cook, covered, about 15 min.,
until hot and tender, but not mushy.

Basic Pancakes
INGREDIENTS:
2 cups all-purpose flour, stirred or sifted before measuring
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1 egg, slightly beaten
1 1/2 cups milk
2 tablespoons melted butter
PREPARATION:
Sift together flour, baking powder, and salt. In a separate bowl, combine egg and milk; add to flour mixture, stirring only until smooth. Blend in melted butter. Cook on a hot, greased griddle, using about 1/4 cup of batter for each pancake. Cook until brown on one side and around edge; turn and brown the other side. Recipe for pancakes serves 4.

Make a salad with the lettuce, tossed with some of the diced tomatoes. Poach the eggs and put them on top of the salad (the yokes will act as a dressing), then sprinkle the whole thing with bacon bits and grated Parmesan Reggiano (your cheese). Make chapatis (an Indian flatbread) out of the flour and milk and serve them on the side. For desert - candied apples!

you could do a bacon cheese omelet with a sugar reduced to almost caramel color for the apples just ad apples to the sugar mix a simply dip them and place on a
then the tomatoes can be 1/4 then seasoned with your choice of spice a pepper garlic fry on one side and the use As a garnish or place atop the omelet

u make my creativity go places but here's a start....
PANCAKES
pancake batter:
1 cup flour
1cup milk
1 egg
1 table spoon sugar (more if u like it sweeter)
beat the ingredients together.
there u have...a nice home made pancake mix.
OMELETTE
2 eggs
diced tomatoes
BACON SALAD
sliced apples
lettuce
bacon (panfried so they are crispy)
okay, now u make the pancakes.
put a piece of pancake on the plate, layer on some omelette, cheese and then another piece of pancake and another layer of omelette and cheese. do this for as many stackings of pancakes u want...4 pancakes the best.
and serve this with your bacon salad.

how about a nice BLT with a fried egg and a slice of cheese on it.
a tall glass of milk.
slice up your apple, sprinkle with sugar if you feel the need and keep the flour for when you wanna bake something.
