I have read much of the Apocrypha. The story of Adam and Eve has many more chapters than what is in the bible. Their adventures after they are kicked out of the garden of Eden are actually quite amusing. They act like little children and god has to swoop in to save their lives on several occasions.

many many contemporary religious writings are not in the bible
and these other writings were purposely not included, it wasn't an accident
this doesn't mean they were "left out" (they were never part of the bible nor were they ever part of any official cannon)
the christian leaders at the time chose books that they believed were inspired and should be part of the holy cannon
just like now, there were lots of people writing lots of stuff
some of it was clearly completely contradictory to the best record they had at the time of the teachings of jesus and the first 12 apostles, so, they worked through a big slush pile and only chose some to be part of the collection we call the bible
you cannot list the books that were purposely left out because any book around at the time (including obvious works of fiction) that didn't get included, was, left out
we do have some records of some writings that were close enough and popular enough to receive close consideration
there is some dispute but it appears that approximately 80 books were rejected during the council of nicea when the biblical cannon normally recognized was finalized

Contrary to a myth that has circulated through the Internet in recent years, there was no single election held to purposely suppress parts of the Bible. It was simply a process of people assembling scripture to suit their beliefs throughout the centuries. To this day, the Protestant Bible contains fewer books than the Catholic Bible. And of course, there are the Gnostic gospels, which were declared heresy in the 4th Century.

The Dead Sea Scrolls were another. There is a good book on this, and many other bible subjects, called "Misquoting Jesus". Many books were left out because they wrote about Jesus in a different light than the church wished him to be portrayed as. Such books explicitly stated he was just a man, that he was married, etc.

"The Gospel of Barnabas" was actually written by Muslims far later than the rest of the true Gospels.
"The Gospel of Thomas" and "Judas" was written by Gnostics (unbelievers) that denied Jesus was the Son of God.
Basically for a book to make it into the cannon of the NT, it had to......
A. Not contain contradicting theology
B. Have been written by an apostle or have apostallic support.
C. Been used and confirmed by the early church as genuine Christian writing.

easy research project for your search engine very interesting too , the books are well documented and dont forget the bible did not drop out of the sky , and was constructed revised translated edited many times many things have been removed in past years , if they didnt fit well with the hirachy of that time , all documented , could keep you busy for a few years.

There were hundreds of books that didn't make it!
The Gospel of Adam and Eve, Gospel of Mary, etc. The books couldn't be authenticated, didn't teach traditional faith, or wacko teachings, etc.
They are widely available to read on the internet.

A lot of stuff was left out . . .
The first council of Nicaea in 325 helped to codify many of the varying beliefs, as did numerous councils after that.
