"how could u screw up jello?" i thought... until i added pineapple to it.
it wouldn't set.
my roommate laughed at me, and so did my mom. lol i had no idea though, i guess this is a well known fact to everyone but me!

does anyone know why jello won't set after pineapple is added?

yep it was fresh pineapple. i had one in my fridge and thought it would taste soooooooo good in jello. haha
i'll try canned next time! :)

2 possible answers:
1. Gelatin is made from a protein called collagen which comes from the joints of animals. Gelatin may be dissolved in hot water. As the dissolved gelatin mixture cools, the collagen forms into a matrix that traps the water; as a result, the mixture turns into the jiggling semi-solid mass that is so recognizable as Jell-O.

2. Pineapple belongs to a group of plants called Bromeliads. Kiwi, papaya, and figs are other types of Bromeliads. The enzyme in pineapple juice that is responsible for the breakdown of collagen is bromelin. The process of canning pineapple denatures the bromelin, rendering it incapable of catalyzing the break down of gelatin.

Fresh pineapple doesn't work in jello because of the acid in it or something like that but canned pineapple works just fine, I know because I almost always put pineapple in my jello

I never knew pineapple would do that. Growing up, my parents used to always make that and there was never a problem. Maybe you added too much water or something? Did you add the juice that came with the pineapple? I bet it has something to do with that.

Let your Jello soft set and have the Pineapple at room temp and drained very well.

there is a type of chemical in certain foods like pineapple, that feed on the enzyme that makes jello set

It will set with canned pineapple in it. Fresh pineapple is a different story. It has to be cooked. It has to do with enzymes.

Did you drain it well? My mom's jello with pineapple always set.
(And her recipe is the best jello ever!)
