The fish is a symbol of the miracle on the Mount of Olives in the book of Matthew. Jesus fed a crowd of over 1000 people with 5 loaves of bread and 2 fish, and the fish is a reminder of God's provision and abundance.

The Greek ICHTHYS (which means "fish") is an acronym for the Greek phrase, Iesous Christos Huiou Theou Soter, which means Jesus Christ, Son of God, Savior. So the graffito of a fish became a Christian symbol very early on, in the Roman catacombs.

because the Greek word for fish-i.e. ikthus had symbolic correlation to Jesus and the symbol of the fish was used in the early church to identify fellow Christians. Drawings of he fish can be found in the catacombs as well as monuments dating from ancient Rome

Because some people say that when there was a persecution to christians in the firsts centuries, they identified theirselfs as christians that way (with a fish in their hands) for romans not to discover and kill them. And It is probably because Jesus once said to his disciples he would make them fishers of men (matthew 4:19).

I'd like to think of it referring the sacred symbol known as the Vesica pisces in sacred geometry.
"Apparently", certain symbols have deep overlapping concepts mathematically and spiritually.
Reminds me of the Eye of Sauron or the emergence of two circles.

Because when Jesus gathered his disciples He told to a few of them who were fishermen to come and leave their jobs and He will show them how to fish for people!
