Stuffed peppers, roasted peppers. Also, you can chop them up and freeze them to add to recipes this winter.

Stuffed Green Peppers

4 medium Green Peppers
1 lb. of Lean Ground Beef
1 small can of Tomato Sauce
1 small Onion
1 small can of Mushrooms
1 Tablespoon of Worstershire Sauce

Set oven 375 degrees
1. Cut tops off Green Peppers and discard, boil green peppers for 5 minutes.
2. In a seperate pan Cook Ground Beef.
3. Put meat in a bowl and add diced Onion, Mushrooms, Tomato Sauce and Worstershire Sauce, mix together.
4. Scoop mixture into Green Peppers.
5. Cook for 20 minutes.

I usually serve the peppers with rice. Serves 4 (or more).

I suggest that you stuff them with your favorite meatloaf mixture and freeze and use as needed. You can then have a very tasty flavorful and fast dish available and you can smother them in your favorite marinara tomato sauce when cooking for additional flavor variety. Another fast, and easy way to go with a lot of peppers that I have done many times is just slicing them and freezing the peppers along with some sliced onions so that you can have a quick and easy pepper and onion mixture to fry and use as a side dish.

gg! I'll get right back to you!! I went to an auction yesterday and I got a whole box full of OLD recipes. One had a bell pepper relish or something.
Right back.

OK--sort of found something.

Pepper Relish

12 red peppers(or green, I guess)
12 green hot peppers
12 onions ( yikes!
2 cups vinegar
2 cups sugar
2 Tablespoons salt

Chop all ingredients together with a food chopper--seed and all. Cover with boiling water--let stand 5 minutes--pour off water.
Add sugar, vinegar, and salt to chopped red and green pepper and onions, and boil hard for 5 minutes. Then put in clean jars and seal.

aw to have a garden again--fresh veggies! I looked in my old cookbook & here's a recipe for Stuffed Peppers:
1 lb. grnd beef, 1 C chopped onion
1 clove garlic, chopped, 2 tsp chili powder
1 tsp salt, 1/2 tsp pepper
2 cans tomato soup, 1/2 C cooked rice (Minute rice suggested)
8 Med green peppers, 1/2 lb. sharp processed cheese
Cook ground beef, onion, & garlic in skillet until meat is browned. Add seasoning & tomato soup; simmer covered for about 10 min. Add shredded cheese; cook slowly, stirring occasionally, until cheese melts. Stir in rice. Cool. Cut peppers in half lengthwise; clean out seeds. Cook in boiling, salted water & cover until tender, about 2 min. Drain & cool. Stuff peppers w/meat mixture & serve. Enjoy!

Chop them up and freeze recipe size portions in small bags.

Use when needed for salsa's, sauces, mexican dishes, salads, omelets, meatloaf, casseroles, soup ...

My son makes a bowl full of chopped green peppers, red peppers, and onions and puts it just about everything.

Had the same problem. So I used them in fajitas, stir frys, and made lots of greek salads to use them up. I also like to stuff them to make a hearty dinner. One of my favorite is with chicken, so here's how I do it.
Cut them in half lenghtwise , empty them, then in a bowl, combine some cubed cooked chicken and mix it with mild salsa and a bit of cooked rice ....Stuff peppers with the mix and top them with a blend of cheeses. Cook in the oven at 350, uncovered , for half hour ....Very good and best if reheated, so make lots......Good Luck!

well if they are good size, you can stuff them, but if they are not - well even if they are, you can slice them and saute' them in butter and put them in anything you cook. I add bell pepper and mushrooms and onion to a lot of things I cook. It has a nice flavor.

No one mentioned fajitas or stir frys..or just cut them up and use with a dip. Blanching them for a few seconds and freezing them is a great way to use them for winter dishes. or anything from spaghetti sauce to meatloaves. Have fun.
