Almond Joy Fudge Brownies
1 (19.8 ounce) box Duncan Hines chewy fudge brownie mix
3 tablespoons vegetable oil
1 cup Eagle Brand sweetened condensed milk
1 (14 ounce) package Miniature Almond Joy bars, coarsely chopped
1/2 cup toasted almonds
Preheat oven to 350 degrees F. Grease a 13 x 9-inch baking pan.
Prepare mix according to brownie package directions, except only use 3
tablespoons of vegetable oil. Pour into prepared pan. Pour and spread
condensed milk over the top. Sprinkle with chopped candy bars and toasted
almonds. Bake for 35 to 38 minutes. Let cool completely before cutting into
2 dozen bars.

Fudge Brownies
4 1/2 ounces dark chocolate -- coarsely chopped
10 tablespoons butter -- cut into pieces
1 1/3 cups sugar
1/8 teaspoon salt
2 tablespoons light corn syrup
4 teaspoons vanilla extract
3 large eggs -- at room temperature
3/4 cup plus 2 tablespoons all-purpose flour
1/2 cup coarsely chopped walnuts
Mocha Glaze
3 ounces dark chocolate -- coarsely chopped
1 tablespoon butter
2 teaspoons vanilla extract
3/4 teaspoon instant coffee granules
1/3 cup evaporated milk
2 tablespoons light corn syrup
2 teaspoons cognac or dark rum -- optional
1/4 cup coarsely chopped walnuts
Make the brownies:
Preheat oven to 325ºF. Line 9-inch square baking pan with aluminum foil so
that the foil extends 2 inches beyond two opposite sides of the pan. Lightly
butter the bottom of foil-lined pan.
Place chocolate and butter in small microwave-safe bowl. Microwave on medium
(50% power) for 1 minute. Stir. Microwave 30 seconds more or until chocolate
is softened. Stir until smooth.
Pour into large mixing bowl and let cool 10 minutes.
Add sugar and salt to melted chocolate mixture, beating until smooth with
electric mixer at medium speed. Beat in corn syrup and vanilla.
Add eggs, one at a time, beating well after each addition. Stir in flour
just until combined. Stir in walnuts.
Spread batter in prepared pan.
Bake for 40 to 45 minutes or until a toothpick inserted into the center
comes out slightly creamy. Do not overbake. Cool in pan on a wire rack.
Make the glaze:
Place chocolate and butter in microwave-safe bowl. Microwave on medium (50%
power) for 1 minute. Stir. Microwave 30 seconds more or until chocolate is
softened. Stir until smooth.
Stir together vanilla and coffee granules in small cup.
Add milk, corn syrup, coffee mixture and cognac to melted chocolate and beat
until thickened, using a whisk.
Pour glaze over brownies and sprinkle with walnuts. Chill for 30 minutes or
until glaze is set.
Using the two ends of the foil as handles, lift the brownies out of the pan.
Cut into bars. Remove brownies from foil.

FUDGE NUT BROWNIES
2 squares unsweetened baking chocolate
1/3 cup butter
1 cup sugar
2 eggs
1 tsp. vanilla
1/2 cup Cream of Rice, uncooked
1 tsp. baking powder
1/4 tsp. salt
1/2 cup chopped walnuts
PREHEAT oven to 350°F.
Line 8-inch baking pan with foil, with ends of foil extending over sides of pan; grease foil.
Microwave chocolate and butter in large microwavable bowl on high for 2 minutes or until butter is melted. Stir until chocolate is completely melted. Add sugar; mix well. Blend in eggs and vanilla. Add cereal, baking powder and salt; mix well. Stir in walnuts. Spread into prepared pan.
Bake 30 to 35 minutes or until toothpick inserted in center comes out with fudgy crumbs. Cool in pan on wire rack.
Lift brownie from pan onto cutting board, using foil handles. Cut into 16 squares to serve.
To make it really fudgy, you can buy some chocolate fudge cake frosting and spread it on top of the brownies and then cut them! YUMMY!

6 Tablespoons margarine
4 ounces unsweetened chocolate
1/3 cup skim milk
1/3 cup apricot spreadable fruit
1 egg yolk
1 teaspoon vanilla
1/2 cup all-purpose flour
1-/1/2 cups suag or 3/4 cup Sugar Substitute (recommended: Splenda)
1/8 teaspoon salt
3 egg whites
1/8 teaspoon cream of tartar
1/3 cup coarsely chopped walnuts (optional)
Heat margarine, chocolate, milk and apricot preserves in small saucepan, whisking frequently, until chocolate is almost melted. Remove from heat; whisk in egg yolk and vanilla; mix in combined flour, sugar substitute, baking powder, and salt until smooth.
Beat egg whites and cream of tartar to stiff peaks in large bowl. Fold chocalate mixture into egg whites; fold in walnuts if desired. Pour batter into greased 8-inch square baking pan.
Bake in preheated 350 degree F oven until brownies are firm to touch and toothpick comes out clean, 18-20 minutes (do not overbake). Cool on wire rack. Server warm or at room temperature.
