Corriander (2tsp)
Dhanja (1tsp)
Turmeric (1tsp)
Ginger (1tsp)
Paprika (1tsp)
Chilli (1 tsp)?
Garan massala (1 level tsp)
Med tin tomatoes or fresh if desired.
Fry 2 medium onions till browned in veg oil.Always remember you can spoon off any excess later.On medium heat add spices except massala, and fry till oil seperates.Add meat etc n cook for about 4 or 5 mins turning all the time.Add toms and simmer till cooked thru.Add garan massala 5mins from end.This is a basic curry but works well.If you like prawns just add 5mins towards end.xxx

In my family, we cook a "Three Curry Curry". We use Indian curry, Thai curry and Japanese curry when we cook a curry dish. Japanese curry paste tends to be sweet so it gives a nice balance to the hotness of the other two curries. Always stirfry the curry paste at the beginning to bring out the aroma of the spices. That's an essential step. You could add a tin or two of coconut milk to replace some of the cooking liquid. It will give the final dish a great taste but it is a bit fattening.

vegetable curry
My recipe uses cauliflower but you can use any vegetable or mixture of vegetables you like. The recipe uses the portion of Basic Curry Sauce that you would have left over if you were making one of the Main Dishes. Handy eh?
Ingredients
1 tablespoon vegetable oil
1 cauliflower - washed, cut into small florets and dried on kitchen paper
half teaspoon good chilli powder
half teaspoon turmeric
half teaspoon ground coriander seed
half teaspoon ground cumin seed
third to half a batch of Basic Curry Sauce according to what you've got left over and how "saucy" you want the vegetable curry
salt to taste
Method
heat the oil in a large pan over a moderate heat
Put the cauliflower florets in the pan and stir fry until the cauliflower gets little brown patches
Sprinkle the chilli powder, turmeric, coriander and cumin over the cauliflower and stir fry for a minute to mix in and warm the spices.
Add the Basic Curry Sauce and salt and simmer on a low heat until the cauliflower is just cooked

The Lamb Curry recipe using the spice blemd mix is really good.
I am vegetarian and have taken the basic curry recipe (left the lamb out) and used vegetables and it is as good. So you can can use this for what you like.

1 goat
Curry powder
Water
2 gallon Largish pot.
1) First turn your stove to it's maximum setting
2) Lower the 2 gallon pot on to it.
3) Immediately fill the pot three quarters full with clear, ice cold water
4) Bring to a raging boil.
5) Add the goat.
6) Now the curry powder.
7) Boil and boil, boil you must boil it.
8)Eat your curry.

All you really need is to fry chopped onions, add chillies, garlic, corriander, cumin & maybe some cardiman when browning meat or to veg & add can of chopped tomatoes - cook til done! It works for me but might not be too authentic.
