Mine's pretty easy. Lemon cake with chocolate chips. You just ùmake a lemon cake from a mix but add a cup of sour cream into the mix, which makes it really really moist and rich. Then you stir in a cup of chocolate chips and bake. Just sprinkle icing sugar, no frosting. Yummy.

It's my favorite, because it's sinfully rich, easy & delicious! But it is one ugly cake! Enjoy!
EARTHQUAKE CAKE
1 c. pecans, chopped
1 c. coconut, flaked
1 dark chocolate cake mix, prepare according to package directions
1/2 c. (1 stick) butter, melted
8oz. pkg. cream cheese
1 lb. box powdered sugar
1 tsp. vanilla (optional)
Preheat oven to 350°F. Spread pecans & coconut on the bottom of a buttered 13”x9” cake pan. Prepare the cake mix as directed on the box. Then gently pour the batter over the nuts & coconut without stirring, & set aside. In a bowl, mix melted butter, cream cheese, powdered sugar & vanilla. Drop by spoonfuls on top of the cake batter. DO NOT STIR. Bake 45 to 50 minutes or until a table knife inserted between the dollops comes out clean. The top of the finished cake looks rocky & uneven like the aftermath of an earthquake!

GREEN TOMATO CAKE.....I LOVE IT BECAUSE I NOW HAVE ANOTHER USE FOR GREEN TOMATOES. Also the reason that it is so good is because it tastes like chocolate cake but alot better and not as firm. It is really soft but it doesn't fall apart.
