How do I make sure this never happens again? I used a propane grill. Medium heat (or so I thought). Only salt & pepper on the steaks. They came out great, but it was scary! Thanks!

The suggestion of keeping your grill clean is absolutely correct. With that being said, the fastest and easiest way of cleaning your grill is to complete your cooking, turn the grill to the highest setting allowing it to reach its maximum temperature and run there for a minimum of 15 minutes. This will burn away any build up of debris on the cooking surface and the burner, as well as the heat transfer material, weather it lave rock or cast iron grating.

Secondly the quality of gas grills varies vastly, Quality gas grills start in the $300 range. When buying a grill go to a business that specializes in outdoor products, with knowledgeable sales people that explain the differences in the products. The bottom line is, if you go to Wal-Mart and buy a grill for $99, you also need to be prepared to have food that is cooked to something less than perfection.

How long has it been since you cleaned out your grill? Over time, meat drippings and little bits of charred chicken and such will acculate at the bottom. This makes it real easy to get flare ups on your grill. Evebn though it's almost fall, give your grill a good spring cleaning and see if that helps at all.

if your grill is a good size you should have one med side and one low side. what it is is the fat and blood dripping from the steaks that catches fire. you need a clean grill first of all, then have heat control. cook them on the med side if they start to catch fire turn them to the low side.it will still cook and the fat will melt out but not to a hot fire. cook them to the temp you want. if they are thick steaks you can cook them witht he lid closed. they will cook faster and more like an oven.

I use "grill blocks",,,,they're four inch square blocks with holes in them ( they kinda look like little waffles ) that allows the heat to come through, but not the fire , ,,,,if you can't find the blocks,,,at least use a good amount of lava rocks,,,you can even buy those in a grocery store,,,,when you get good at it,,,you can learn to use hickory or moquite chips soaked in water and let that smokey flavor go off on it,,,,,,,,GOOD GRILLIN !!!

Make sure you have a spray bottle full of water.

Spray the flames before your steaks are engulfed.
