I'm a fairly big Italian guy and I work nightshift. Due to health issues, I was told by my Dr. to eliminate all Dairy, Sugar, Salt and Caffiene... I'm guessing I will become a very small, cranky and TIRED Italian guy soon... are there any recipes for foods that can help and don't taste like hamster bedding?

Well, I can tell you that I have a child who should eat no wheat, no dairy and limited sugar, so I surely empathize with you. We are subbing Almond or Rice milk for Dairy (the vanilla flavored ones can be a bit sweet, but the regular is not bad) and a new sugar substitute that we have found called Xylitol. It looks and tastes like sugar but it is not. It's 100% natural and it is very nutritive with a super low glycemic index. Here's a link: http://en.wikipedia.org/wiki/Xylitol

The salt and caffiene is another matter - those you may just have to tough it out with those. Maybe start your day with calistenics instead of coffee?

Keep in mind you still have a LOT of food choices left- meats (except highly processed stuff- so OK to steak, no to pepperoni), most fruits and vegetables, etc.

Learn to shop 'around' the grocery store- the outer areas where the produce, meats, fresh baked goods, and other more natural, fresher stuff is.

My problems are treats, desserts, and drinks. My solutions so far are:

Treats/desserts- frozen grapes, fruit, frozen juice bars, baked chips, flavored popcorns, non-dairy smoothies, Jello treats, sherbert, etc.

Drinks- flavored waters (Current fave- Crystal Clear Sparkling Water Beverage), herbal teas (Celestial Seasonings makes some good stuff!), low-cal beer or near-beer, light tea (tea is pretty low in caffeine, I make mine pretty weak. I'm getting to like Green Teas as well, which are pretty good for you), and various juices. You can make some great mixed drinks with juices and such! If I HAVE to have a soda, it is a diet root beer (naturally low in caffeine)

hamster bedding is actually not that bad. But I doubt it would meet your nutritional requirements.
And you won't be cranky, it's the sugar and caffeine that do that.
