New York city is a planet in and of itself. So we need some help to help you out. You say you hate tourist type places but you can hardly avoid them, although in some neighborhoods, the "locals" are far more numerous than the tourists. But first think, do you want shopping, and, if so, for what? Clothes (hip or upscale couture), furnishings, flea markets? Do you want to stroll in neighborhoods? Chinatown, Harlem, the Village? Do you want small music venues? Do you want ethnic food? Do you really want to miss what it feels like on Fifth Avenue and Times Square and Central Park, however touristy that is? Do you want to avoid the amazing museums, even if touristy? How about art galleries? Once you do some thinking, get a copy of Time Out New York, or go on their website. It will help you pick a tour. The only definitive answer I'll give you to avoid touristy places is avoid the SeaPort. It's the only place that manages to make NYC look like any city in America, just a mall.

You hate 'touristy' places - yet you are a tourist????
Anyway, my favourite things to do were the Statue of Liberty, the Empire State Building, and Times Square.
Maybe go to a Broadway musical? I saw 'the Producers' and loved it.

There is an art gallery on Hudson Street, just north of Canal. I don't know what it's called, but they always have the most bizarre installations, that take up 10,000 sq ft
