Chicken Cordon Bleu for Two
2 Boneless Skinless Chicken Breasts
4 slices of Ham
1 small block of spreadable Cheese (garlic & herb is best)
1/3 cup Italian Bread Crumbs
2 tbsp Pamesian Cheese
2 tbsp Butter
Pound chicken breasts to 1/4" thick with a meat malet. Spread a thin layer of cheese on chicken. Top with 1 or 2 slices of ham. Roll up each breast and secure with a toothpick. Combine bread crumbs, and Parmesian cheese... roll chicken in crumbs.
Place in cooking dish and dizzle melted butter over chicken.
*remove toothpicks!
Bake uncovered at 350 degrees for 40 to 45 minutes- or till chicken is done.

Classic Chicken Divan
2 -10oz packages of Frozen Broccoli Pieces
1/4 cup Margarine or Butter
6 Tablespoons Flour
2 cups Chicken Broth
1/2 cup Heavy Cream
6 Boneless Skinless Chicken Breasts
1/4 cup Graded Parmesan Cheese
1) Set oven to 350 degrees
2) Cook Broccoli and drain
3) Melt butter in sauce pan; blend in flour; 1/2 teaspoon of salt; and a dash of pepper.
4) Add chicken broth, cook and stir till mixture thickens and bubbles.
5) Stir in cream, add parmesan (remove from heat)
6) Place broccoli in baking dish, top with 1/2 of sauce mix.
7) Place chicken breasts on top of broccoli & sauce, top with remaining sauce (and sprinkle with a little extra parmesan cheese)
8) Cook for 1 hour (or until done)

Homemade Pizza
Dough Recipe (use whatever pizza toppings you want to)
Dissolve:
1 T Yeast in
4 T Warm Water
Combine and add to Yeast:
1 C Warm Water
1-2 tsp Salt
2 T Olive Oil
1) Beat into yeast mixture 2 C Flour then add enough flour so you can kneed till the dough tends to stretch rather than tear when pulled on.
2) Let rest 10 minutes.
3) Press onto lightly greased pan (hint: I put some cornmeal on the pans before spreading the pizza dough on. Just sprinkle a thin layer over the oil.) Let rise 10 minutes.
4) Bake at 425 degrees for 10 minutes.
5) Add toppings... sause, cheese, toppings... ect
6) Bake 15 minutes at 425 degrees.
The best: to try a Greek Pizza use these toppings: sauce, mozzerella cheese, feta cheese, sliced black olives, sliced fresh tomatoes, spinich... and even artichoke hearts!

Here is a balsamic glazed salmon recipe that was sent to me via a recipe trade that sprung forth from a message board that I frequent. I changed it around just a wee bit because originally the sauce called for brown sugar and I have a tendency to use honey or maple syrup. If you wish to use sugar, the recipe called for 1TBL + 1 tsp.. The recipe is so amazingly easy and delicious. I increase the glaze ingredients because I just cannot get enough of the stuff!
1) mix together 1/3C balsamic vinegar, 1 TBL maple syrup, and 2 TBL fresh squeezed lemon juice.
3) heat 1.5 tsp oil in a nonstick skillet till very hot (but not smoking) add 1lb of salmon fillet (I cut it into two or three pieces) skin side up and turn the heat to high. Cook for 4-6 minutes untill seared, flip and cook skin side till done 4-5 minutes. Remove fish from skillet.
4) In same pan add the vinegar mixture. Be careful as it will steam & spit. Cook for a couple of minutes untill thick and syrupy. Pour over salmon. Serve w/ a steamed veg and a salad & prepare to be worshipped by your dinner companions

INGREDIENTS:
2 1/2 cups diced cooked chicken
4 ounces sliced mushrooms, about 1/2 cup
1 1/2 cups frozen peas and carrots or mixed vegetables
1/4 cup chopped onions
1/2 can cream of mushroom or cream of chicken soup
milk
.
Topping
.
1 cup biscuit mix
1/4 cup shortening
3/4 cup milk
PREPARATION:
Put chicken, vegetables, salt and pepper in casserole. Add soup and stir, adding milk a little at a time until desired consistency is reached. Blend shortening into biscuit mix and add 3/4 cup milk, stirring until smooth.
Pour batter over top of casserole. Bake 45 min at 375°. Cool for 10 to 15 minutes before serving.

What a fun idea, I would love to receive something like that as a gift! Your family is in for a treat. I would definitely include a section on appetizers and such. Maybe a section on meals just for one or two people? And maybe recipes large enough for a crowd. I would also include a section on breakfast items, and one for cooking with kids. Of course, desserts are always a good idea to include. And perhaps one with recipes for certain condiments or sauces that you have created. You could also make a section with special holiday recipes! Good luck! Have fun with it! I sure wish someone in my family would do this!!!

Here's my favorite white bread recipe, I just made a batch yesterday, it is easy even if you've never made bread.
House Bread
1 package of active dry yeast
2 cups warm water (120º - 130ºF)
1/2 teaspoon powdered ginger
2 teaspoon salt
1 tablespoon sugar
5 cups all-purpose or bread flour
Place 2 cups of flour in the bowl and add the ginger, salt and sugar. Mix with the flat beater on low until well mixed. Then add yeast and mix again. Add the warm water and slowly increase mixing speed to med. high and mix until batter is smooth, about 2 minutes. Add the rest of the flour 1/2 cup at a time until the dough forms a ball and cleans the sides of the bowl.
Knead 8 to 10 minutes until the dough is smooth and elastic. Place in a warm bowl coated with soft butter, turn once to butter the top, cover with plastic wrap and let rise until double.
Punch down, knead for a few times to work out the air bubbles and form into one large, or two small loaves, french bread style.
Place them on the cookie sheets coated with butter and dusted with cornmeal.
With a sharp knife, slash the loaves across the top with a few diagonal cuts. Brush the loaves with ice water using a pastry brush.
Place the loaves in a warm, draft-free place and allow to rise until doubled.
Pre-heat oven to very hot (450ºF). For a great crust, place a pan of boiling water on the bottom of the oven and brush each loaf with melted butter.
Bake in the very hot oven for 7 minutes, then reduce heat to 350º and bake for 25 to 45 minutes longer. Cool on a rack and enjoy!

potatoe soup: this makes a lot: 10# red potatoes, 1 box of potatoe flakes, 2 rings of smoked sausage, 2 pints sour cream, 1 quart half/half, 2#'s shred cheddar cheese, 1 onion diced, 6 carrots diced, 6 celery sticks diced.... peel and cut potatoes, add carrots celery and onion to potatoes add water to large kettle(fill water just until covering potatoes) boil potatoes until just tender enough to cut. turn off heat (do not drain!) pour half/half into bowl and add some of the potatoe water, mix. then add diced smoked sausage,and all other ingredients (except potatoe flakes) reheat soup until almost boiling, stirring frequently. add flakes to desired consistency, season with salt and pepper. serve with dollop of sour cream and chives. This makes about 2 ice cream pails, so you could cut this in half. If you need more ideas i have lots of them. email me.
