What a great question! I've noticed that the hens are always sold as whole birds and they're always more expensive!
Here's what I've found - they're usually smaller than the roaster chickens, and sometimes about the same size as the fryers - but they feel like they have more meat on them (the fryers oftentime feel "thin" in the meat department when you pick them up). One recipe I've found calls for 1 large roaster or a baking hen. I've also noticed that recipes that call for boiling or come from "exotic" places (like Europe LOL!) tend to call for hens. I have heard they have a stronger flavor than "traditional" chickens, so they might be good in recipes designed for game animals.
Oh yes, they are the female of chickens :)

A hen is merely the female chicken. The male chicken is called a rooster.

Nothing. A hen is a female chicken. So when you buy a chicken, you're getting a female chicken or a hen.

DId you mean a hen or a rooster? The hen is the "girl" chicken and the rooster is the "boy". Most times hens are used fpr baking because the meat is a little more tough and the rooster is what you are eating most times you have fried chicken, the meat is more tender, BOTH are YUMMM...OOO..

Hens are female chickens and roosters are male. I think hen is use for some other yard birds like Ginnie's.

a hen makes eggs, a chicken is a general term for both male and female chickens. A cock is a male chicken, and a hen is a female.

Age. Usually you roast a Hen to make it more tender
