I Love you Chicken Stew
1 Pkg of Boneless Chicken (1 breast, 4 thighs)
2 Chicken Bullion Cubes
2 stalks Celery
1 onion
1 Pkg little carrots
6 potatoes
1 can Green Beans
1 can Cream of chicken soup
Salt and pepper
1 Fudgesickle
Place chicken in pot. Add bullion cubes , chopped celery and onions, salt & pepper. Cover with water. Boil for 1/2 hr. Skim fat off top of water while chicken is boiling.
Add carrots, potatoes. Simmer 1/2 hr.
Add Green Beans and cream of chicken soup. Simmer 10 min.
Eat Fudgesickle. You deserve it.

Rainy Day Foods seem to beg for relaxation. You don't want to do any heavy cooking, or heavy thinking for that matter. Just sit back and watch TV while listening to the patter of rain on your roof. That picture brings to mind KFC. Yep, get a bucket of chicken and sit it out. If the rain makes the lights go out, you have your mashed potatoes to live off of.
Rainy days can be a family magnet. No one wants to go out in the rain so they'll probably stay in and chat. A bucket of something simple is fun.

Crock pot Pot Roast (what I'm making tonight)
1 can french onion beef broth
2 potatoes cut in large chunks
5 carrots cut to your preference (not too small or they'll be mushy)
1 onion, quartered
3-4 pound beef roast (whatever cut you prefer)
3/4 c. red wine (not cooking wine, only cook with a wine you would drink. Today I used Fish Eye Cabrenet)
2 Tb. Butter
Season the roast with Essence of Emeril (you can purchase or make your own, recipe follows). Braise in a bit of olive oil or veg. oil. Place diced potatoes at bottom of pot, put meat on top. Top with carrots. Put in onion, butter, add liquid, cover and cook on low 6-8 hours.
Optional: Add 10 oz. sliced mushrooms 2-3 hours before meat is done.
Serve over rice.
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme
Combine all ingredients thoroughly.

In the fall and winter in Southeast Texas there are some really dreary, cold wet days. My husband LOVES these recipes on those particular days, and I cook them in the crockpot so they fill my house with a homey smell while they cook.

Beef Tips and Gravy
TEXAS COWBOY STEW
1 lb. hamburger
1 Chopped onion
2 cloves chopped garlic
1 Can of tomatoes
1 Can of kidney beans
1 Can of corn
1 Can of tomato sauce
1 Can Beef or Chicken Broth
Fry hamburger until brown. Add onion and garlic and cook until tender. Drain and transfer to crockpot. Add remaining ingredients and cook on low all day.
Serve with any loaf bread, crackers or rice. You can also add diced potatoes or any other vegetable you like.

Red soup and a grilled cheese sandwich and a warm blanky good book or movie with someone special.
Red soup...
package of dry lipton chicken noodle soup, prepare amount of water on package a can of tomatoe sauce(small)
3 handfuls(just the cup of ur palm, not heaping) of elbow mac.
stir and simmer til tnedr pasta
grill the cheese with real butter, and lots of gooey cheese.
Also, corn chowder, beef stew and dumplings, chicken soup thick w, added rice and spaghetti, so thick and richmm good.
Chicken pot pies too, or simple toututre pie.
Hot chocolate and and a flufanutter sandwich , dollup w fluff on hot choc. too

Chili-either traditional hamburger chili or chicken white bean. My secret ingredient is beer. It gives it a great taste-just put it in early and let it cook a very long time over low. I put frank's red hot in too....with the chicken I top with sour cream, cheese and taco chips. Crackers for beef. Good luck!

I love a nice thick hearty soup during the rainy season. And maybe homemade garlic mashed potatoes or stuffing.

Split pea soup and jasmine tea.
Make the soup in a slow cooker, with fresh carrots, bay leaf, chicken stock and a little cayenne pepper. You can take the cooked peas and run them through the blender and then put them back in the pot for the smoothest version.
