Cheese curds are actually a living colony of single-celled, amoeba type organisms and NOT a dairy product at all, as you may have been led to believe.
Hence, the "squeak" you hear as you bite down is actually thousands of tiny voices yelling, "Oh shiiiiiiiiiii...."*
* (Think the cliff scene in "Butch Cassidy and the Sundance Kid.")
Tho$e in certain northern $tate$ have $urpressed thi$ information for rea$on$ that are pretty obviou$.

I think it may have to do with freshness but they generally squeak more when the temperature of them warms. I haven't had any for a long time. Last time I had some was when I went to Swiss Village in Nampa, Idaho.

Umm... you may not want to eat those. They don't squeak when I eat them. There may be something wrong with yours.
