thats a good question - but if veggies grow in or on the ground (like onions, potatoes, pumpkins...) then do we consider strawberries and tomatoes (which are fruits) to be vegetables, after all they grow on the ground too...?
what about the egg plant? is that a fruit? what about oh well, maybe someone else can think of more? i'd say its a fruit, why cause i absolutely LOVE fruit (yea, i kinda like veggies too) but well, i'm hooked on olives, can't imagine life without them...dang, was just trying NOT to think about them...when this question came up. you wont believe but the first website here below i have SAVED to my favourites for several months now and the one below says (i just went to check it cause i found it as a link on the first website - it says....the olive is a FRUIT.)
ps - i've never seen it as an ingredient for vegetable oil, but if somehow my eagle eye has missed this, then it is perhaps because when we say someone is vegetarian, it doesnt necessarily mean they dont eat other stuff such as for instance...FRUITS! if u know wot i mean...
btw - just went back to check, look at this page, it tells you 3 different types of olive oils, no mention is made of it being a vegetable oil...wow, it says that olive oil is useful in some cancer prevention...amazing

It is a fruit, check out the link below.

I think more than one fruit crosses the line and people think of it as a vegetable, such as the tomato.

Maybe the olive being called a vegetable oil is a ploy of marketing. Would you buy a fruit oil to use in your cooking and on your salads?

Maybe its called a vegetable oil because it can be used with and goes well with vegetables.

Good question, I did not know..looked it up. Here is what I found.

Olives
Small bitter oval fruit, green when unripe and black when ripe, used for food and for oil.
Olive oil
Olive oil is a fruit-juice. Olive oil is cold pressed olive juice and olives are a fruit. That’s why it's so healthy and is used in the finest cuisines all over the world. Cold pressed means that the olives are picked and squeezed and are not boiled before squeezing

Vegetable is a CULINARY term not a scientific term. There is no absolute definition of vegetable. Vegetables can be from many scientific or botanical classifications like leaf (lettuce), roots (carrots), bulb (garlic), flower (broccoli, cauliflower) and fruits (cucumber).

The Olive is the fruit of the Olive tree (Olea europaea) and is a major component of the agriculture and gastronomy of many countries adjoining the Mediterranean Sea in Europe, North Africa and Asia Minor. It is often fermented to make olive oil.

Olive oil is a vegetable oil obtained from the fruit of the Olive tree (Olea europaea L.), a traditional tree crop of the Mediterranean Basin. It is used in cooking, cosmetics, soaps and as a fuel for traditional oil lamps. Olive oil is regarded as a healthful dietary oil because of its high content of monounsaturated fat (mainly Oleic acid) and polyphenols. Olive Oil is manufactured by fermentation of Olive fruit.

Vegetable fats and oils are organic compounds not miscible with water, derived from plants. Nominally, oils are liquid at ambient temperature, and fats are solid, but this is an imprecise definition, as ambient temperatures vary, and typically there are "melting ranges" rather than "melting points". A dense brittle fat is a wax.

Vegetable fats and oils include several categories of compounds: essential oils, macerated oils, and triglycerides. Hydrogenated oils are a chemically-modified triglyceride. Macerated oils are a deliberately-adulterated oil, typically using a triglyceride as the base.

If it grows on a tree, it’s a fruit. The reason why olive oil is included in vegetable oil is because…hell I don’t know why, but it is a fruit.

How about tomatoes…why are they classified as fruit?

It's a fruit and it's called olive oil, not vegetable oil.

Fruits have seeds inside. Avocado's are also oily.
