Saturated fat is a fat with the maximum number of hydrogens, i.e. , long chain fats with C-C single bonds; these are often solid at room temp and are the ones most likely to raise your cholesterol level. Unsaturated fats have one or more C=C double bonds and are more likely to be liquid at room temperature. They are slightly harder to metabolize and so don't raise your blood lipids quite as quickly or as much (to the best of my knowledge). Partially hydrogenated fats are unsaturated fats that are subjected to a process of hydrogenation to form less unsaturated fats. In the process of hydrogenation, certain double bonds re-form in an alternate configuration to what is normal--instead of cis- double bonds (where the functional groups are on the same side of the molecule-found naturally) they form trans-double bonds (a result of the processing of the substance-functional groups are on opposite sides of the double bond.) These are not naturally occurring, at least not in the quantity they are seen in processed foods. And their effects on the body have only come to light recently. Out of all of them, I'd say you'll gain weight faster eating saturated fats, but since they are all fats and all have the same basic caloric value, it is best to limit intake of any of them. Since trans-fats actually do damage, it would be best to take in as few of them as humanly possible.

The human body needs both saturated fats and unsaturated fats to remain healthy. Most dietary recommendations suggest that, of the daily intake of fat, a higher proportion should be from unsaturated fats, as they are thought to promote good cholesterol and help prevent cardiovascular disease, whereas an overabundance of saturated fats is thought to promote bad cholesterol. However, a few studies have found that little evidence for a strong link between the consumption of saturated fat and cardiovascular disease.

Note: It is technically more accurate to call saturated and unsaturated fats types of fatty acids, as it is specifically the fatty acid found in a fat that is either saturated or unsaturated. However, referring to fatty acids as fats is common.
