Lentil Soup Recipe

Lentil soup makes a hearty, delicious side dish or complete meal. This soup is naturally low in fat, has no cholesterol, but is high in both protein and fiber. Enjoy!

Ingredients

½ lb lentils, dry

2-3 carrots, chopped

2 celery stalks, chopped

1 small yellow onion, diced

2-3 garlic cloves, minced

1 tbs olive oil

2 tsp salt

pepper, to taste

9 cups water

Directions

Place lentils and water in a pot and bring to a boil. Lower heat to medium-high, and let simmer for 45 minutes, or until lentils are tender. Check on soup occasionally, and add warm water as needed.

In a pan, sauté onions and garlic using olive oil. When lightly browned, place in soup with lentils.

Let soup simmer on low heat for 15 minutes.

Let sit for at least 15 minutes, but preferably an hour or more. (Put leftovers in fridge and reheat in stove or microwave. The soup will taste better the next day!)

Pack it with nutrients and cut out fat. Classic minestrone should cover just about everything... and the lycopene and other goodies should help strip-mine your body of impurities as well.

Ingredients
3 oz (75 g) shortcut macaroni or other small pasta
1 oz (25 g) butter
1 tablespoon olive oil
2 oz (50 g) streaky bacon, rinds removed and finely chopped
1 medium onion, finely chopped
2 celery stalks, washed and finely chopped
6 oz (175 g) carrots, washed and finely chopped
2 fresh or tinned tomatoes, chopped
1 clove garlic, crushed
2½ pints (1.5 litres) ham or chicken stock
1½ tablespoons fresh torn basil
8 oz (225 g) leeks, washed and finely chopped
6 oz (175 g) green cabbage, washed and finely shredded
1 level dessertspoon tomato purée
2 tablespoons chopped parsley
salt and freshly milled black pepper

First heat up the butter and oil in a large saucepan, then add the bacon and cook this for a minute or two before adding the onion, followed by the celery and carrots and then the tomatoes. Now stir in the crushed garlic and some salt and pepper, then cover and cook very gently for 20 minutes or so to allow the vegetables to sweat – give it an occasional stir to prevent the vegetables sticking.

Then pour in the stock along with the basil. Bring to the boil and simmer gently (covered) for about 1 hour. After that add the leeks, cabbage and macaroni and cook for a further 30 minutes.

Finally stir in the tomato purée, cook for another 10 minutes and, just before serving, stir in the parsley. Serve in warmed soup bowls with crusty bread.

Also try a classic french onion.

The most important thing is to use good fresh ingredients. I sometimes make stew or soup from some left overs like this.

Start out with some wine vinegar of whatever kind you like and olive oil, add chunks of onions, green peppers, thyme, cummin, pepper and some type of salt (as much as you need or none), then bring that to a boil and let simmer until it smells good.

They you can add fresh or canned corn, beans of any kind, your left-overs and/or chunks of stew meat, chicken, pork, fish, or any type of meat that could go with the other ingredients.

Now cook it slowly maybe in a crock pot. It has to be wonderful because you use really good stuff in it.

You can thicken it by adding rice or some type of pasta.

my mum makes this great tasting soup which helps to burn fat (although I'm not sure how) and is very healthy - its a 0 point soup from weight watchers. Use vegetable stock cubes and add the following: carrots, onions, cabbage, peppers, leeks, any other veg you like except potato and then add any herbs and spices you prefer, she spices it up with chilli powder or cayenne pepper. I think the cabbage helps to burn the fat somehow!

It tastes great and as long as you keep it full of veg and only stock no creams or milk etc it will be virtually fat free!
