I think it is a slight allergic reaction. It happens to me too. I eat carrots and like them so I am not extremely allergic but that happens when I peel carrots too (not when I am just handling them for a few minutes though). It is worse if I work with pumpkin. My hands go from the dry feeling to actually burning then.

It does happen to me too. I could be wrong about the allergic reaction but it definitely a reaction of some sort since it doesn't happen to anyone else in my family.

If onions can make you cry, then perhaps carrots could have some effect. I peel them with one of those special knives for peeling carrots so I can do it quickly and there is no time for any effect.

Some chemistry major or prof could do a study and find out what chemicals in a carrot could cause a reaction.

Hi. I don't get this with carrots but I do with marrows and courgettes, to the point where I have to get someone else to peel or chop them - when raw. I can eat them OK.

So I don't think you're imagining it - dunno what the explanation is, but I find with the marrow thing that if I can't delegate the job then some good hand cream works. The Body Shop does a hand cream containing hemp and it's great, plus a tube will last a year.

Hope this helps.

Yes. So I wash the carrots well-before peeling and OR wear non-latex gloves while peeling. It is a reaction to chemicals on or in the carrots.

That's kind of weird, but I can relate because I know there are things (though I can't think of any right now) that make my hands feel strange like that. I think maybe it's because of the dirt on the carrots.

a little digging around on several sites....
it seems that carrots contain falcarinol and didehydrofalcarinol which can cause contact dermatitis.
