The Unbeatable Chicken or Turkey Sandwich – from Mom! (you can use thinly sliced roast pork or beef too - it's all in the layering!)
Many people do not seem to realize that the layering of the ingredients is extremely important in the taste of any sandwich. I can put all the mayonnaise in the world on the bread, but if the turkey is tasteless or dry, the sandwich is disappointing.Try the following:
2 slices Texas Toast -style whole grain or 12 Grain with Oats and Honey bread.
1 Tablespoon spreadable pure butter
Real Mayonnaise (never Miracle or Salad Whip)
Dijon Mustard (only Dijon - none other)
Thick slices of white and dark turkey meat
4 thin slices of tomato
3 thin slices of Vidallia onion
Crisp inner rib of Romaine Lettuce
2 large basil leaves
salt
fresh cracked black pepper
Spread your bread with butter, both slices.
Spread each slice with 1 teaspoon real mayonnaise.
Place Basil leaves on one slice
Place turkey slices on basil
Spread a good dollop of mayonnaise & Dijon on turkey slices
Layer tomato slices on turkey
Put Salt and cracked pepper on tomato - don't be shy!
Layer onion slices on tomato
Layer Romaine lettuce on onion
Put second slice of bread on top, press lightly, and enjoy!
For a treat, put crisp bacon slices (3 slices per sandwich) on top of chicken/turkey after you put mayo/dijon dollop on top.

Grilled Mozzarella & Roasted Red Pepper Sandwich
Makes 1 sandwich
Ingredients
1 tablespoon reduced-fat olive oil vinaigrette or prepared reduced-fat Italian salad dressing
2 slices (1 ounce each) Italian-style sandwich bread
Fresh basil leaves (optional)
1/3 cup roasted red peppers, rinsed, drained and patted dry
2 slices (1 ounce each) part-skim mozzarella or reduced-fat Swiss cheese
Nonstick olive oil cooking spray
1. Brush dressing on 1 side of 1 bread slice; top with basil, if desired, peppers, cheese and remaining bread slice. Lightly spray both sides of sandwich with cooking spray.
2. Place large nonstick skillet over medium heat until hot. Add sandwich; cook 4 to 5 minutes per side or until cheese melts and sandwich is golden brown.

The best sandwich EVER:
A bagel (I like the new bagel bread, but a regular bagel works fine)
Onion & chive cream cheese
4 slices thinly sliced ham
1 slice american cheese (or cheddar)
spread a layer of the cream cheese on each side of the bagel, layer the ham and cheese in between. Simple but surprisingly good!

On a panini roll, baby spinach leaves, brie cheese, and red seedless grapes. grill/press it until it's flat, bread is crusty & toasty and the cheese is starting to melt and get runny.
Yum. If you like, serve with some honey-mustard sauce for dipping, but it's great just plain too.
(PS a george foreman grill makes an excellent panini press!!)
