As far as I understand it, religious Jews consider Jesus to be a blasphemer, but those that are less religious are the ones who cooked up this idea about him being a prophet.
This is my theory: Jews are always hearing from Christians how great Jesus is and all the good things he taught us. So, they know they're not allowed to believe in him as the Messiah, but they need to somehow make sense of how he can teach such great things. So, they gave him the lesser office of prophet.

Uh, they've never believed Jesus to be a prophet. Most don't even acknowledge that he ever even existed.
He wasn't crucified, he was impaled according to the Biblical greek (stauros=pole or tree). He was impaled on an upright pole.
Jesus never claimed to be God. He stated otherwise several times (John 5:19; 14:28)
You're a little off.

Christ clearly says that His Father is greater than Him:
14:28 Ye have heard how I said unto you, I go away, and come again unto you. If ye loved me, ye would rejoice, because I said, I go unto the Father: for my Father is greater than I.
(King James Bible, John)
How a Personality smaller than God can be God? Other statements may have caused misunderstanding when He showed absolute power as a reflection of the Sun of Truth in the perfect mirror of His Person. Other Prophets also appeared the same way when They convey the Creative Word of God.
The Jews have rejected the divine role of the Messiah in Christ, and then Who have they accepted in that long period of 2000 years? It would be pitiful for both Jews and Christians if they again denied Christ at His second advent.

I do not know where did you get such information.
I never heard that Jews do consider Jesus ( PBUH) to be a prophet, I never even heard that they have any respect for Him as a person. That is why they tried to kill Him, but by the Mercy of Allah, He was saved, they hated Him along time ago.
Yes , Jesus (PBUH) is one of the prophets of Allah, and He will be back to save humanity.

How about inserting the qualifier "some" before "Jews" As it stands, your statement includes a logical fallacy..
