We prefer pork here. Beef is too tough.

Love pork ribs but beef are great too. Ribs in any animal will be tough if we try to cook them too quickly. Any bone in rib & the tougher cuts of meat with fat should be cooked low & slow. Very low temps for a long time. Temps would be anywhere from 200f - 250f. Time would vary according to weight.
Any lean cut of meat is not well suited to this kind of cooking though. There's not enough fat in lean cuts to break down the muscle fibers.
NEVER BOIL THE MEAT!!!!!
