You can eat both
Both have air bubbles in them
both have a mixture of different textures

Hey Michael,
Both are boiled!
Jam must be boiled so that it doesn't spoil while inside the donut. Additionally, if the jam were not reduced enough, you would have some very soggy Jam donuts!
