Worstishire (spelling) vinegar, any herbs you have like garlic salt or spicy stuff ... tabasco mixed with flour ... ect ... ketchup is always a great substitute and you can mix any of the said ingredients with them to spice it up!

Horseradish and sour cream is a good alternative... otherwise,
I would combine cider vinegar, Worcestershire, ketchup or tomato paste, garlic and a touch of either honey or molasses in a small to medium sauce pot. Bring to a boil and reduce to a simmer for 15-20 minutes. If you have not minced your garlic fine enough, you can puree this mixture in a blender or food processor until you achieve the consistency that you desire. Also be sure to add salt and pepper to taste. If the sauce is too thick or too strong, add a little water to adjust the thickness and seasoning. This essentially is a "Carolina Style" BBQ sauce with the exception being the ketchup or tomato product and should be great on chicken and pork as well.

Ingredients:
1/2 cup Dark raisins
1/2 cup Chopped dates
1/2 cup Vinegar
1/2 cup Spaghetti sauce mix (dry)
1 1/2 tablespoon Chili powder
1 tablespoon Salt
1 1/2 cup Apple juice
1 tablespoon Lemon juice
1 tablespoon Garlic salt
1 tablespoon Dried minced onion
1/2 cup Water


Directions:

Combine first 4 ingredients in small saucepan and cover. Simmer for 10 minutes. Remove and let stand for 30 minutes. Blend thoroughly and set aside. Bring vinegar to a boil.

Remove from heat, stir in spaghetti sauce, mix powder until smooth. Add remaining ingredients and the raisin/date mixture.

Put through blender again. Measure and add half as much water. Measure again and add 1/4 as much in sugar and 1/2 as much in vinegar, adding vinegar a spoonful at a time, tasting until the flavor is suitable.

2 cups ketchup
2 garlic cloves, minced
2/3 cup chopped onion
1/2 cup each lemon juice, water, Worcestershire sauce and vinegar
1/4 cup soy sauce
1/4 cup packed dark brown sugar
2 tablespoons prepared mustard

Combine all of the ingredients in a 3-quart saucepan; bring to a boil over medium heat. Reduce heat and simmer, uncovered, for 30 minutes. Strain if desired. Cover and refrigerate. Yield: about 3 cups

I love this steak sauce. It is a bit unconventional but please do give it a try atleast once. I assure you, you will not be disappointed.

INGREDIENTS:

* 2 tablespoons raspberry jam
* 2 tablespoons brown sugar
* 2 tablespoons Worcestershire sauce
* 2 tablespoons tomato sauce
* 2 tablespoons malt vinegar
* 5 drops hot pepper sauce
* salt and freshly ground black pepper to taste

In a saucepan over high heat, blend raspberry jam, brown sugar, Worcestershire sauce, tomato sauce, malt vinegar, hot pepper sauce, salt, and pepper. Bring to a boil over high heat, reduce heat to low, and simmer 10 minutes, or until thickened.

Ketsup, bbq sauce, & worstershire sauce, Yum Yum! I add seasonal too, sometimes extra galic.
