The carrots are fine and probably the celery too. I'm not sure how the cucumbers will turn out when they thaw. Might be too mushy.

Yes, you can, but depending on the vegetable, it might not be worth bothering. Veggies with less water in them (potatoes, peas, carrots, cauliflower, etc.,) freeze and thaw just fine, but others like lettuce, tomatoes, or celery don't come out very well at all. With things like onions and peppers, it's best to chop them up before freezing, and thaw portions as needed, for omelets, etc.

Wont taste the same.
Make sure they have only be frozen once in their lifetime. re-freeze don't work.
Some vegetable will feel soggy once defrosted.

Yes, thaw them out or cook them frozen. As long as they still look good and not turning bad.
You can freeze things uncooked, but once thawed out you need to cook them to refreeze them.
Meat especially or you will get sick.
