If I have a carrot that is still firm but I don't remember when I last got it is it still good? What about cucumbers and peppers? If it's still firm but is a month old is it still good? What about toatoes too?

It's stupid that you can't correct spelling mistakes on this site. I tried to correct a spelling mistake and it ended up posting twice.

Cucumbers and peppers are only good 7-10 days in the vegetable crisper of the refrigerator while carrots keep for about a month.
You'll be able to tell when veggies go bad as they become soft and mushy. Sometimes only spots turn rotten allowing you to salvage portions of the veggies.

Almost any vegetable is still fine to eat (no matter how long it has been stored) as long as it doesn't have visible rot. And if it does have brown, "squishy" spots, those spots can be cut away, and the rest of the vegetable is still OK.

Vegetables have a high water content, so as they age, they will get softer (some of the water evaporates). A cucumber that's a couple of weeks old will feel soft on the outside, but it's still perfectly good to eat if you peel off the skin. Asparagus will get more flexible over time--it will lose its "snap"--but it would be perfect to use in a soup, or in a dip or spread.

If you have any vegetable (or fruit) that you're not sure about, throw it away. But if it's salvageable, then by all means use it (don't waste it).

Carrots can last for a while. Cut the end to see if it's dark. If it is, discard. As for peppers and cucumbers, normally, they become full of water and soft after a week. I wouldn't eat those. For your toatoes... if they are potatoes, they're almost always good. Tomatoes tend to become ultra soft and rotten from the inside. Try to cut them and if they look too brown inside, throw them away.
