It's where you have a program, and everyone brings their own lunch, as in a brown bag, like at school. Just reserve a room, organize your program or find a speaker, define your topics, make notices, and put on the notice that everyone needs to bring a "brown bag lunch."

I wouldn't want to run one because I think they are a waste of time; either you have lunch together as a social thing, or have a proper meeting as a professional thing. Mixing the two is doing justice to neither.
The people you are having lunch with are not worth your attention, since you are in a meeting.
The meeting is not worth your attention because you cannot devote work-time to it.
So I'd decide whether it was a social meeting, or a professional one, and organise accordingly. If I wanted both, I'd organise both.

A brown bag session is when a group of people bring their lunch to work or school and go and sit and eat together. They can discuss different things/themes/topics, etc. The key is that it is done over the lunch hour.

Our brown bags are BYOL (bring your own lunch) and usually have a guest speaker in a field that would interest our group

brown bag is a term used by rent boys and some gay people.To organise just get a brown bag and hang around public toilets.
