basically all of the scraps from butchering the pig. snouts, hooves, other cuts that are not normally sold in stores. The intestines are used as a casing ONLY after being sterilized and cured in a salt solution. Other ingredients would include salt, spice, egg, cream (hot dogs and bologna are emulsified deli meats) Nitrites or "pink salt" as a preservative. They are actually not hard to make and stereotyping of slaughterhouses has given us the idea that they are 'dirty' or inferior meats to eat. If you can find a small, local German or Polish Butcher, they make very good Hot Dogs and Bologna. (Yes, Bologna IS Italian). Hope this helped out some.

I'm not sure about bologna, but Farmer John's hot dogs are made from the brisket of the pig. If you hold your arm up, the brisket is the section below the armpit and next to the breast.
When buying hot dogs do not buy anything that says MPM or mechanically pulled meat on the label. Also, don't buy hot dogs with byproducts or fillers.
The process for making hot dogs: The brisket is ground very finely, finer than ground beef. Spices, corn syrup and preservatives (sodium nitrate, usually) are added. From there, the mixture gets placed in hot dog shaped casings. From there they go into a smokehouse for several hours. This is where they are cooked and more flavor is added. This is also when they taste best! After that, the casing is removed and they get packaged.

I know the answer to this for sure, because my dad was a butcher and I went to work with him a few times. I even helped him grind it (illegal - but it was his butcher shop and he let me). They use anything and everything that they have leftover - lungs, cheeks, tongues, intestines, you name it. No eyeballs and no liver, no brains - but believe me it looks disgusting. You know what else is disgusting? It's the same exact stuff they put in the dog food.

I'm a butcher and manager of my shop thus here is my "theory". most bolo and hdogs are made from a mixture of turkey/chicken/and maybe beef.lol.. from these animals that produce your question are every last scrap that is left. now i do not know how far that goes to the extent of organs etc., but i don't see too many organs from these animals for sale. it goes into lunch-meats to supplement the iron deficiency in unprivileged children.
