After I eat fruits like apples and pears, my tongue "itches." I'm not sure how to describe the feelings. It's not very pleasant, but more of a distraction rather than a pain.

I can still eat things like apple crisp and canned pears, but the normal variety produce this effect. I don't think this has to do with the skin, but I don't really know.

you're allergic to something you ate. That happends to me if i eat fish. Its a really weird sensation. I know what you mean.

It might be the citric acid concentration or amount of Vitamin C in raw fruit versus canned or processed fruit.

My daughters lips swell up after eating fruit. Its because of the wax or the insecticide they put on them.

Check with a Dr.,...sounds like anaphylaxis (allergy).
