It would not bother me at all. It just shows that she had the will power to change her life for the good. I would be proud of her.

Depends if the behavior is changed.
If the issues for eating were personal - can these issues happen again to trigger a re-lapse? if not, no big deal - if the person is positive about their future and likes themselves now - they may be the best type person to keep a relationship going as they have reason to be positive and know themselves better,.

It depends on the woman and how she carries herself. You have
to like her weather she is big or small no matter what. If you love
her size should not matter before or after.

Why would that bother you?

Everyone has a past, hers just happens to be that she was overweight. But she's done something to improve herself and make her more healthy. You should admire that about her.

It really would bother me, and the reason is because most girls that were fat at one time usually wind up putting the weight back on.
