The caution with pork is to ensure that it has been cooked well. Pork can carry some very nasty things that the human body has trouble with.
You might want to consider adding some herbs to it to bring out more flavor. One that I have come to enjoy is Lavender.

There are some religions which prohibit the consumption of pork. If you're Jewish and keep kosher, you can't eat pork. If you're a faithful Muslim, you can't eat pork. Othewise, it's a perfectly healthy food. At one time, infestation of the animal with a parasite called a trichina worm was a problem. You ate undercooked pork, you could develop trichinosis - the worm burrowed through your tummy and established itsself in your muscles - it was disabling and very painful. Properly raised and processed pork does not carry that risk. Hey: try a roasted pork loin topped with apple butter! That's good!

Pork is very delicious, when cooked correctly. Unfortunately, most people overcook it.
Pork tenderloin is leaner than chicken.
Jews don't eat pork because, back when they were wanderers, lambs and sheep were more transferable than pigs. Hence, the pigs stayed behind.
For some reason this turned into pigs being "dirty animals" (which they are not) and the Arabs and Muslims adopted the anti pork thing based on this myth.
Pork was considered bad due to trichinosis. Thanks to modern storage and cooking methods, such as refrigeration and heat, this is no longer a problem. This is why you don't see pork confit, though I imagine it would be delicious.

I had pork chops for dinner tonight as well. I love it, and wish that I had it more often than beef or chicken. I have Jewish friends who will eat bacon and sausage, but cannot bear to eat pork chops. Since they are already violating the kosher dietary laws, it is definitely a mental (guilt) thing.
Pork and seafood are actually the 2 best kinds of protein for you so "they" say now. The poor pig will forever suffer a negative, untrue image of unslovenness. The pig is actually top 10 smartest animal, supposedly smarter than a dog. And they are actually very clean animals. The mud keeps their nonperspiring skin cool.

In the old testament it says not to eat pork or fish with a skin and some other things too. Then the new testament it says the old law is cast aside. If they hate pork but not other meat it is generally a mental thing.

I love pork. Its my favorite. Try this take a pork roast any kind but sirloin is best. Brown it in hot oil on all sides. Put in a big casserole dish pour a pack of onion soup mix or 2 over it add a little water cover and bake 350 till it falls apart. Make gravy with drippings and the soup mix. YUMMY

Prepare medium-hot coals in kettle-style grill. Remove chops from marinade and discard marinade; place on grill directly over coals, cover grill and grill for 10 minutes, turning once.
Serves 4.

It's better for you than beef, but not as good as chicken, which in turn is not as good for you as fish. That being said, it tastes great and makes for some wonderful meals.
Most people who specifically object to pork (as opposed to all meat) have religious objections to it.
