We had sorghum in a field next to a crop of bloody butcher last year, now we are getting what looks like a cross between the two, sorghum like heads but tinged red. Is this possible?

No ... according to the site below "all reported attempts to hybridize maize and sorghum have failed". Even artificial manipulation of cells doesn't produce particularly useful results.
