I'm working with a caterer planning a wedding menu and requested beef tenderloin and he came back with "entrecote of tenderloin." I just want to be sure it's a good, top cut. Thanks.

It means cut of beef, tenderloin is the best fillet of beef, enjoy your wedding

Actually,the entrecote is a cut from the ribs and tenderloin is a cut from the loins so to say "entrecote of tenderloin" actually makes no sense at all... The website listed below gives you some info on the different cuts of meat and where they come from. Entrecote would be a well marbled and flavorful cut similar to a rib-eye. Tenderloin is the most tender cut but is not considered the most flavorful. I personally think it is hard to do tenderloin for a crowd - many people like their beef well done and that is one thing you shouldn't do to a tenderloin - cooking beyond medium rare makes them tough. An entrecote or other rib cut would actually be more readily cooked beyond medium rare since the fat marbled in it helps keep it from getting tough. Good luck with your wedding!
