So I've decided to stuff the chicken with stuffing. And I was thinking of mashed potatos. But I'm so bored with the plain carrots and peas. Any creative ideas for veggies with this meal?

roast asparagus, your favorite mushrooms ( i prefer white with this) and cubes of red potatoes. put all the veggies in a baking dish, add some salt and paper and olive oil and just bake on 450 degrees for half an hour. its great!

What about artichokes? cook ahead and cut in 1/2 place in fridge after squeezing lemon juice all over clean out center too ...serve 1st as a cold salad put a blop of mayo next to artichoke then Use your peeler to peeeeeeeel long strips of carrot and stick them in the artichoke boiling water for 2 min remove and cool slice some tomatoes and salt pepper them and a dash of vinegar . Fresh spinach ...don't cook simply put on plate under hot slices of chicken and smashed potatoes and it is perfect yummm.Your plate will sing w/ colour flavour and be delish...

Nah, we figure that comfort food like this needs to be comforting and regular. Silly eh? We use these types of meals to ground us and relax us. Oddly enough, I have a chicken roasting in my oven even as I type this.
I do like to add some minced onion to my mashed potatoes though.

Just plain carrots and when they are almost done drizzle with some maple syrup and a dab of butter. They are awesome that's how they make the carrots at Cracker Barrel!

Carrots would be great. Try this - steam carrots till crisp tender, drain, stir in a jar of red pepper jelly. Spicy, sweet and wonderful.

here's a throw on mashed p. Put mayo and a little milk in in and mix good.. then make some baked asparigas, salt and pepper, and bake for 20 mins.
